Posted - Sep 22 2009 : 11:54:38 AM my husband found me my absolute favorite cook book at an antique store. it's from the 60's. i adore it. and in it is a whole punch section! Including this one:
Wassail Bowl with Baked Apples: begin 45 minutes ahead yeild: 18 cups or 36 1/2 cup servings
3 large cooking apples 1 gallon apple cider 6 whole cloves 6 whole allspice 2 teaspoon ground nutmeg 1-6oz can frozen lemonade concentrate 1- 6oz can frozen orange juice concentrate 1 cup packed brown sugar sugar short cinnamon sticks
directions: 1. preheat oven to 350. cut apples in half cross wise and place, cut side down, in 13" by 9" baking dish. bake 25 mins or until the apple halves are fork-tender. 2. meanwhile, in covered 6-qt saucepot over low heat, simmer 2 cups apple cider, cloves, allspice and nutmeg. 3. add remaining apple cider, undiluted lemonade and orange juice concentrates and brown sugar; heat until hot, but not boiling, stirring occasionally. 4. Pour hot cider mixture from saucepot into heated large punch bowl. 5. float apples, skin side up in punch; sprinkle tops with a little sugar. 6. To serve, ladle about 1/2 cup of the hot punch into each punch cup; add a short cinnamon stick to each serving.

Posted - Sep 22 2009 : 11:43:06 AM I always mix 2 parts apple cider with one part club soda. Mix right before serving as club soda tends to go flat quick. Its simple and tasty without added sugar and is slightly sophisticated if served in champagne glasses.

1st one:
4 qt apple cider 1 cup packed brown sugar 6 oz frozen lemonade 6 oz frozen orange juice 6 whole cloves 6 whole allspice 1 tsp ground nutmeg 3 cinnamon sticks
If you use the whole all spice and cloves, tie them in cheesecloth. Heat the mixture. Stir occasionally.
2nd one:
3 red apples 250 g hulled strawberries 4 chopped mint sprigs 850 ml apple juice 1500 ml apple cider 570 ml lemonade
Make sure ingredients are well chilled. Cut unpeeled apples 1cm cubes. Combine fruit and mint with apple juice in large punch bowl. Mix well, cover and refrigerate until serving. Before serving add chilled apple cider and lemonade.

APPLE CIDER PUNCH
4 c. apple cider 2 c. cranberry juice 1 c. orange juice 1 (12 oz.) can apricot nectar 1 c. sugar 2 sticks cinnamon
Heat all ingredients in a saucepan and let simmer 20 minutes. Cool. Pour into punch bowl. Top punch bowl with floating orange slices decorated with cloves. Serves 20-25.
