Need recipe or potato candy. My grandmother used to make it. Thought about it yesterday when making mashed potatoes

When we lived in Maine, people made potato candy called Needhams, I think, and it was coated with chocolate. It was really yummy. If this is the one you're thinking of, I can look that recipe up.

Here's my recipe: 1/2 cup boiled potatoes
1T butter
1 t salt
1 t vanilla
mash these together then
slowly start adding confectionary sugar (you will need 1 pound)mixing with a spoon. Before all the sugar is added it will get really tough at this point stop mixing with spoon and knead with your hands until all sugar is added.
Then I roll it out like a cookie sheet size and spread with peanut butter the amount is totally up to you (I think I use about 3/4 cup).Then I roll this up jellyroll style starting with one of the longer sides.Next cut the candy into small pieces and enjoy.

This recipe is very easy and fun to do with the kids.

That sounds very interesting. I have never heard of that. I would be interested in trying that too.
