I had some leftover sausage from biscuits and gravy this weekend, so I decided to make some breakfast burrito's for the week. I try to get organized at night, getting Violet's stuff together, but sometimes I'm still cutting it short in the a.m., and Justin doesn't always take the time to eat.

SO, I browned my sausage, added some cayenne, cumin, onion, and some garlic. After it was browned, I added some low fat cream cheese and diced jalapeno until warmed. Then I put them into taco sized flour tortillas, topped with a little shredded colby jack cheese, rolled them up and wrapped them individually in saran wrap, and put them in a container in the fridge for easy grab in the morning. I just warmed mine in the microwave here at the office, and lemme say, with a Horizon organic chocolate milk, that was a very nice little treat for breakfast.

Jus called me from work to thank me, so it must be a good idea . And how easy and cheap? You could use any leftover stuff in the fridge and doctor it up. Even hashbrowns.

I have one shelf set aside in the freezer on top of my fridge for just breakfast goodies now. It helps alot. It wouldn't work for me if the breakfast stuff ended up in the big freezer..oh my.
My kids still at home are 12,12,13 and nearly 15 and still WANT breakfast...but like you said..oldest one wants it simple and grab and go. Arn't we smart?

I did the same thing, Marybeth. I never really was a breakfast eater, much to my mother's (romantic ideas of a warm toasty kitchen on an early Autumn morning) chagrin. I would sit in front of a bowl of piping hot Cream of Wheat until it turned into a cold, gluey paste...Loved coffee, though!

Now, for whatever reason, I like breakfast. Not big breakfasts, except on weekends, but a yogurt or something to grab and go, as you mentioned.

And don't feel bad, Mary Beth, I forget things in the freezer, too, but I'm getting much better at it, as I try to become more financially savvy

Jonni and Jenny both great ideas. I never think of freezing things because I always forget them in the freezer.
I raised 4 girls and at a certain point in their lives, mostly as teen agers, they decided they didn't need breakfast--even after ME telling them all the good things about breakfast--specially how it gets the blood rushing to the brain to help with school. Falls on deaf ears. Well now that I have a 15 yr old grand daughter living with me I began to hear the same old story. So now with easy grab and go--off she goes in the morning munching on something that possibly could actually be good for her. LOL MB

Aunt Jenny! Good to know you're well and hopefully rested! Thanks for the recommendation of that book. It just really never occurred to me to make something (so simple and good) up in advance, freeze or stow in the fridge and always have something on hand that's warming, filling and good for me. Like I said, I just sort of went, "well, DUH."

I know Violet is just a baby, but I'm already thinking ahead for school day breakfasts and lunches. If I can get good at it now, just imagine how great her meals will be when she carries her lunch!

I made a whole lot of breakfast burritos, ham(and bacon or sausage too) and cheese and egg english muffin sandwiches, pancakes and waffles and muffins and froze them about a month ago...for my kids to have breakfasts while I was in the hospitalhave knee surgery and recovering..It has been such a lifesaver..and like you said...there are always leftovers. I had never bought things like that frozen so I never thought of it until I read it in a cookbook (Frozen Assets...I really recomend it!) I didn't ever think about freezing that sort of thing! I sure won't stop now..it is so easy to make a triple batch of something and freeze the rest!

It turned out even better than I expected, Lainey, and I thought, "well, DUH!" All the times I let breakfast leftovers go to waste in the fridge, or given them to the pups (which, is not a waste because it's a treat for them), but it's a great use and we can start our day with some nourishment, instead of my normal 2 cups of coffee and growling tummy!
