Can I freeze tomatoes right out of the garden? I just want to make spaghetti sauce and tomato sauce with them. Could I just thaw them out and then put them thru the food mill? I would like to do just one marathon day of tomatoes when they are all ripened. This ever work for anyone?

I froze my tomatoes right out of the garden in plastic bags. I would take out what I needed, run them under hot tap water and the skins would slide right off. I used them for soups and spaghetti sauce.

I made roasted tomatoes by putting the tomatoes on a cookie sheet with olive oil, basil, oregano, garlic and salt. Then I let them cool off and put them in a freezer bag...I have used the ones I made last yr...glad I had enough to make some for this yr. Great for sauce and chili.

i've never tried freezing just tomatoes, but i love to freeze spaghetti and pizza sauce. i swear freezing it really brings out the flavor!

We have frozen whole tomatoes straight out of the garden and they work well for cooking, such as stews, etc.

Our favorite way to "put up" tomatoes is to dry them. We then put them in almost everything. Drying them seems to intensify the flavor and storage is so-o-o-o simplified!!!

I have frozen tomatoes, whole. When I use them for sauce, I cooked them and run them through the seive. It gets rid of the seeds and skins and core if there is one. Make sure all the tomaotes are best quality, not a blimish. It could be hiding a bad spot under the skin. If you have lots of tomatoes, this is a good way to keep them for a month or 2 when the frost has gotten to every thing.

I have frozen them strait out of the garden but they do tend to be mushy when thawed. I usually cook my sauce and then freeze it flat in ziplock type freezer bags. I usually slow roast the tomatoes. Really brings out their flavors!
