Girls, this is so good! A dear friend gave me the recipe just recently after years of begging :) I hope you like it too!

Peach Cream Pie

Ingredients:
1 pre-baked pie shell
7 large ripe peaches
1 cup sugar
3 tablespoons cornstarch
1/2-3/4 cup water

1/2 pint whipping cream (or heavy cream)
4 ounces of softened cream cheese
3/4 cup powdered sugar
1 teaspoon vanilla extract

Peel and slice 2-3 peaches into bite-sized pieces. In a large saucepan, combine sugar and cornstarch together. Add peaches and mix well, add water as needed (you will want this to be of a pie filling consistency). Stir over medium heat until it starts to boil and thicken. Remove from heat and let cool. Peel and slice remaining peaches and add to the above peach mixture and refrigerate until ready to use.

Combine whipping cream, cream cheese, powdered sugar and vanilla extract. Beat until fluffy.

Place cream filling into prepared pie crust, chill at least 5 hours. At serving time, top with peach mixture and serve. Enjoy!
