I think I'm going to have a bounty of acorn squash this year and wondered if anyone has ever made a butter or jam from them and if so how did it turn out? Recipes please if anyone has a good one to share?
Thanks!

Sharon I bet squash pie would be delicious. After all pumpkin is a squash, right? I wonder if I tried an apple butter recipe if that might work? I have some time yet to investigate and figure something out. Thanks much for your ideas and suggestions!

Cheryl, I'm sorry I don't have a recipe for you but maybe in the you can puree and freeze the squash. If all else fail you can make squash pies or breads. I grew up in New England and Squash pie was the thing there, and actually tastier :)

Maggie, that sounds wonderful!

I made an awesome pumpkin chutney once. I pretty much made up the recipe, but I know it had walnuts and dried cranberries in it. lots of spices, some vinegar. Everyone raved! it was especially delicious on brie.

I had some squash butter once packed at a local farm. It was delicious. Look for a recipe for pumpkin butter. I dont have a recipe. Well, I will look in the cookbooks and see if I do!
