Is there anything to do with carrot tops? I have lots and it just seems like a waste to throw so much "green" away. Anyone here do anything useful with them??

I usually just toss them (and all the rest of my vege scraps, peels, etc...) into water to make a rich veggie stock.

Mine go to my chickens, who love them...otherwise the compost pile.

that sounds yummy, angela! thanks for reposting that link... i finally took a peek and there are some great recipes in there. Though I'm still wondering if anyone has tried drying them?

They are an amazing addition to soups and for making stock with. They have a stong flavor and would be usable dry. My grandma used to cut them up and add them into everything, even with her roasts and baked chicken! I'm gonna be usin mine in my chicken soups and venision stews.

I remembered this post from last year... hadn't tried eating the tops, so wondered if anyone else had some yummy recipes to share? Has anyone dried them in the dehydrator? That's what I'm hoping to try. Kristin said you can use them like basil, so I assume you could dry them like basil as well? I want to make sure I have a plan this year so I don't waste all those lovely greens! :)

Our llama, whose name is Rocky, LOVES them. When he sees me coming to his pen with green stuff in my hands he comes running.

Have you ever watched a llama run? What a funny sight!!!

We have customers who specifically request the carrot tops. They are "raw food" people and they make green smoothies with them. But that's about all I know. ?

My rabbits prefer the tops to the bottoms! Pigs and chickens eat 'um too. But without critters, the compost is an excellent option to get the nutrients back eventually.

Don't completely rule out the dog! They need greens, too In fact many domestic animals like greenery, I have a cat that adores fresh spinach & will even steal it from the rabbit cage

Couldn't you use them to make pesto? I have never made it, but maybe the tops could be used like half with basil. I bet they are full of all kinds of good nutrition. You could also put them in salad. I use celery tops in salads and even in tuna salad.

thanks, girls - the compost pile won. :o) If I had any animals around that would eat them (my dog probably wouldn't appreciate them), I would've shared, but alas....no such animals yet. somday when we get our place in the country! :o)
