I discovered this recipe and am in love! Zucchini salsa! Sounds horrible, tastes great. :) You can of course adjust the seasoning to your taste. but this is a great way to use an overabundance of zucchini. http://www.recipezaar.com/Zucchini-Salsa-Canned-11217

My boyfriend is Irish - they don't call it "zucchini" they call them "courgettes". so if you want it to sound fancy call it Courgette Salsa. :)

My daughter discovered this recipe online and we made it, with a couple of substitions to make it our own - I was afraid the vinegar and brown sugar would make it "ketchup-y" so I used lime juice and lime rind instead - and I didn't have red pepper flakes so used cayenne pepper. (It was a little zesty!)

Served it yesterday to my in-laws and they raved.

I've been making a similar recipe for a few years. Yes, it is tasty and a good way to use up those zucchini.
