Posted - Aug 12 2009 : 06:30:12 AM Peaches are just about ready here and I was wondering how you ladies freeze yours. I haven't done it for a few years and remember just using lemon juice but they ended up changing color to a less appetizing brown.
I'd like to try it again so could you girls give me some tips? Pretty please with sugar on top ![](icons/icon_smile.gif)

Posted - Aug 12 2009 : 11:45:41 AM I just blanched, peeled and quartered the peaches and stuffed them in freezer bags with honey water (1 cup honey to 2 cups water). I use a crumpled piece of wax paper to push the peaches under the liquid as the freeze, that way the tops don't pop out and turn gray....

I forgot to mention that I guess it was a bushel (big box) that I used and I would just get a big bowl prepared and then put them in the skillet. I think it gave me about 8 quarts. Of course some were ate by the kids before I could get to them!

Posted - Aug 12 2009 : 09:40:56 AM I don't really measure out for this. I guess I should but I just eyeball it! I put about 1/4 to 1/2 a stick of butter in a regular size skillet and let the butter melt. Then I add my peaches and add about 1/4 to 1/2 a cup of sugar. I like to use pumpkin pie spice just because it has everything I would use like cinnamon, cloves, etc. already mixed together. I just sprinkle about 1 tbl. of that on the peaches and let them cook for about 5 minutes. When it's done it's like peach pie filling you would buy at the grocery store. I used to put mine in freezer bags but I'm trying to cut down on plastic around here. But it works just as well as canning jars. Just remember if you do put it into jars make sure to leave enough headspace for it to expand.

Posted - Aug 12 2009 : 08:01:29 AM For my peaches, all I did was blanch, peel, slice and mixed them with some Fruit Fresh and sugar and pour them into the freezer bag. Sometimes we just thaw them a little and eat them plain for dessert, or I throw them in the blender with plain yogurt and make popsicles.
I never thought about freezing them the way Tammy and Kelly do, but that sounds great. Definitely on the list for next year! |

Posted - Aug 12 2009 : 06:51:49 AM The butter and suger thing works really well for me. I usually put them in freezer bags, though, because of the way my freezer is arranged. They're excellent for a mid-winter peach pie, hot from the oven!

Posted - Aug 12 2009 : 06:48:45 AM I cut mine in half, took the skin off, and cut into slices. Then I cooked mine down a little with butter, sugar, and spices in a skillet. Let it cool and put in my jars. Let the jars cool some more and then I just put them in the freezer for pies, cobblers, etc. You could probably process the jars in a hot water bath if you didn't want to freeze them. It was really easy. Hope this helps! Tammy
