Posted - Mar 01 2006 : 12:55:19 PM I think lasagna is a good one to make-You can throw it together ahead of time...and put in the freezer.. Then cook it just like the commercial frozen dinners at the grocery store~~ Jan |

Posted - Mar 01 2006 : 08:48:28 AM I love this super simple baked ziti recipe that I rely on quite often- I hope you will try it and find that you like it as well! I also have a bun in the oven (my third, due 4/9)...what is your due date (or scheduled surgery date), Debra? We will all be thinking about you and wishing you the best! Is it a boy or a girl or do you know? Enjoy, Karen
Super Simple Baked Ziti 8 servings 35 minutes/ 10 mins prep
A quick and easy way to prepare a tasty and filling pasta dish, just use your favorite jarred spaghetti sauce. You can use any shape of pasta if you don't have ziti on hand.
1/2 lb ziti pasta 15 ounces ricotta cheese 3 cups mozzarella cheese, grated 3 cups spaghetti sauce 1/2 cup parmesan cheese, grated
1. Preheat oven to 350. 2. Boil ziti, following package directions, drain and place in a large bowl. 3. Mix all the ricotta cheese and half of the mozzarella with the ziti. 4. Spray a 13x9 pan with Pam. 5. Cover the bottom half of the pan with about half the sauce. 6. Put the ziti mixture on top of sauce. 7. Pour remaining sauce on top of ziti. 8. Sprinkle with the parmesan cheese. 9. Top with the remaining mozzarella cheese. 10. Bake for 20-30 minutes until cheese is melted and it is lightly golden.

Posted - Mar 01 2006 : 08:46:08 AM Debra - go to the library and check out the book "Saving Dinner" by Leanne Ely. A friend recommended this one to me and I have taken quite a few of the weekly menus from it to use. I've modified some of the ingredients to suit our tastes and "how we do things" at my house, but maybe it will be easier for your daughter to have these menus/shopping lists..what a great girl to take on that responsibility!
I hope all goes wonderfully well for you and your soon-to-be babe!
XOXO, Libbie
