Is anyone canning peaches, apple sauce, etc. with Stevia or another alternate sweetner? I'm looking for some recipes, I guess mostly measurements, for canning with, in particular, Stevia.

Any help is greatly appreciated!

Hmm, I'd be very interested too. I'd love to use Stevia instead of sugar! For now though I just use the Pomona Pectin. It allows you to use honey or low sugar as an alternative to all those 7 cups of sugar!

I have not tried canning with Stevia, but you might check at a health-food store. I know there are several Stevia cookbooks out there because I grew it last year and wondered what to do with it. They were out of books at that time, and I didn't really have the money at the time I next visited the store. Just haven't returned to purchase one. Let me know if you find any recipes using Stevia.
