Hi Ladies, I thought it would be fun to have a forum where we could share recipes that we tried or would like to try. Tomorrow or tonight I will post my zucchini pizza on here.

Does anyone have a really good recipe for Chicken pot pie? It's my dad's favorite and I want to make it for him someday this week.

Never can get enough recipes. I to have book and book and clippings and cards. I have recipes that date back to Fannie Farmer days.

I told you, too many recipes. I watched 2 shows on Food Network today and printed off 4 recipes. Seems like we spend most of our meals eating leftovers. Almost never have the samething twice. Mainly because I don't remember what I put in it. I just baked a batch of cookies. New recipe that I threw in what was left of 2 jars of strawberry jam. Don't suppose I'll do that again. Going to enter them in the fair. Will make them again if they win anything.

Wow Maggie, sounds great! Will probably have to cut the recipe in half. Ole Ron and I would have a hard time eating that much. Gotta do something quick with the zucc. I have a bunch of grandkids comming tomorrow night but the 15x11 pan is full of cherry chocolate bar cake. See Melanie, I told you that you CAN have too many recipes. Right now I have more recipes than pans to cook it in. Oh my, maybe I can get the cherry chocolate bars out of the pan. Writing down the recipe. The Kids will love it. The party tomorrow night is welcome home for grandson comming home from a 3 month missionary trip to Chili So America.

Ok ladies, here it is. Sorry I was late. Been cleaning house, sewing 6 nine patch pillows, and cooking dinner for my mom so she can have a break. love helping her out. (smilies)

For the Crust
4 cups shredded peeled zucchini, drained and pressed dry.
2 cups cooked rice
1 and a half cup shredded mozzarella cheese
1 cup grated parmesan cheese
2 eggs

For the Filling
1 medium onion, chopped
1 and a half cup spaghetti sauce ( we made our own homemade sauce)
1 teaspoon oregano
1/2 teaspoon salt
2 cups shreeded cheddar cheese

Combine crust ingredients and press into a greased 15x11x1 jelly roll pan.
Bake at 400 degrees for about 20- 25 minutes until set and lightly browned.

Combine filling ingredients except for the cheddar.
Pour over crust, and sprinkle with cheese. Bake at 400 degrees for 15 minutes. Let stand 5 minutes before cutting and serving.

Hope you ladies like it. My mom made it for us kids and was so good!!

Melanie, Yes you can have too many recipes! But then, I just keep collecting, cutting out and printing out several every day. I keep telling my "girls" what collection is what. I don't want them building a big bonfire when I'm gone.

Maggie, looking forward to reading the zucchini pizza recipe. Don't have the recipe but going to try zucc lasagna. Made with zucc instead of pasta. Otherwise lasagna resipe.

I threw a handful of sm thin sliced zucc in my last jar of bread and butter pickles a while ago. We'll see how that turns out.
