Some one just gave us several pounds of limes, I thought I would juice some to freeze, and dry a few for decoration, maybe eat a few to ward off scurvy, but does anyone have any ideas of what to do with the rest? I'm open to any suggestions. Thanks Ladies

I'm so glad you liked it Carol :) I think I will have to try it with Salmon. Hmmm or maybe Halibut we have some a friend brought us from Alaska :)

Limes are a staple ingredient in Persian recipes. You may want to look some up on the internet. I have several Persian cookbooks, but the recipes are pretty long!

i just tried this recipe from Taste of Home, issue from April/May 2008 and loved it!

Tropical Lime Chicken

Salsa to put on top of chicken:

1/2 C. pineapple, cut into small chunks
1 medium kiwi, cut into small chunks (i used strawberries from the garden and it worked well!)
1/4 C. chopped red or green pepper
1 T. lime juice
1 T. red or white wine vinegar
1 t. crushed red pepper flakes
1 T. honey

mix and refrigerate till needed

marinade for chicken:

3 T. plus 1 1/2 t. lime juice
1 T. canola or olive oil
1 t. grated lime peel
1/8 t. salt
1/8 t. pepper

I doubled the marinade, depends on how much chicken you are making. mix it and marinade chicken with sauce in plastic bag or container for 2-4 hours.

drain marinade; broil chicken 3 inches from heat 5-6 minutes on each side (it took mine a little longer) till done. serve salsa over chicken and place chicken on rice or couscous. it's delicious!

Make mojitos. Lots of them. The chicken recipe sounds wonderful. Seriously, I use alot more limes than I do lemons. Lime marmalade is a great idea too.

It's not about being perfect, but enjoying what you do. Set aside time to be creative.

After reading these recipies I'm wishing I had more limes! Sharon, those tacos will be on our table tomorrow night! And Tina, I have some one I am going to take dinner to, this will be great. Thank you all for your help

How about limeade instead of lemonade? We used to drink that a lot when we lived in mexico. MMMMMM!

Here's one of our favorite recipes using lime juice:

Grilled Lime Chicken Soft Tacos

1 1/2 pounds skinless, boneless chicken breast meat
1/8 cup red wine vinegar
1 lime, juiced
1 teaspoon white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
10 (6 inch) flour tortillas
1 tomato, diced
1/4 cup shredded lettuce
1/4 cup shredded Monterey Jack cheese
1/4 cup salsa

Mix vinegar, limejuice, sugar, salt, pepper, green onion, garlic and oregano together. Place in a Ziploc bag with chicken breasts. Marinate for about an hour. Remove chicken from marinade and grill. Cut grilled chicken into strips.

Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.

you can make a nice chicken casserole dish by taking 2 cup of rice, 4 cups of water in a casserole dish.lay about 4 boneless,skinless chicken breasts on top of the rice. add a bit of pepper sprinkled over top of the chicken then very thinly slice the lime and remove the seeds. lay the lime slices over the chicken and a few over the rice. bake at 350 degrees for 1 hour or until juices in chicken run clear and rice tests done.

Freezing the juice works really well. I use ice cube trays, pop them cubes out when frozen and store them in Foodsaver bags in the freezer. Whether you need just a little juice or a lot...it's perfect! The zest can be grated first and frozen as well.
