OK I have a question. I have a bunch of peaches that I would like to can, but I do not want to make jam & I do not want to add sugar. Can I simply water bath can them with a bit of citric acid & a bit of water?? THey are SOOO sweet ; they really don't need anything else. Anyone just can plain fruit like this w/o sugar??

Question gals? Last fall I canned gingered peaches. Had a wonderful sweet/sour recipe that had vinegar, ginger,brown sugar in it and the sauce itself was to die for. Anyway, I canned them and they all sealed. The thing is, I think I left too much head space and the whole batch has turned black. We've not used any because I'm simply afraid that there was too much air and we'd poison ourselves if we ate them. Do you think I need to just toss all of them and call it a learning experience? I have to say that they don't look very appealing and gosh it just makes me sick. They were sooooooo delicious when I tried a bit that was left over from the canning batch. What do you all think?

We always made elderberry jelly. So do you just cook down the berries with apple juice and then can?

Yes, also blueberries, elderberries etc. Well, if your going to drink the elderberry juice you probably do want to use apple juice, otherwise it's pretty puckery!! (We drink the elderberry juice when someone is getting or is sick, it is really good for you and really helps.)

I didn't know you could do this with just water. I will do try it this year. Can you do the same thing with pears?

I canned 65 jars of peaches a few weeks ago just using water. Worked great. Made peach cobbler last night and it was wonderful.

I plan on canning some next week. I usually add sugar, this year I'll only use the water, does it need to be hot first??

All we do to can our peaches is to add apple juice. Otherwise we just use water, no citric acid. Works great.

Yes you can, I always do my peaches that way , that way you can do anything with them. I don't like all the sugar anyway.
