I think I'm going to make this today and I had to share because I think it's such a unique recipe! I pulled it from my MIL's miscellaneous recipes and made it once before... it goes so well with coffee!

simmer for 10 minutes; then cool for 10 minutes:

2 c. sugar
2 c. strong coffee
1/2 c. shortening
2 c. raisons
1 apple, peeled and grated

after first step, blend these ingredients and stir into liquid that has cooled:

2 c. flour
1 t. baking soda
2 t. baking powder
1 t. each: cinnamon, allspice, cloves, nutmeg
1 c. walnuts (optional)

Grease and flour 13 X 9 dish; bake at 350 degrees for 25 - 30 minutes. cool cake and dust with powdered sugar.
