Um... they are going crazy. I inherited about 5 plants and they've got fruits on them. When do I pick them? How do I know they are ready? How do you use them? Any help would be appreciated.

Green sauce!!! (taco sauce) I use about equal parts tomatillos, green tomatoes (halve and squeeze out the seeds so they arn't as "wet") and green chiles (such as anaheims) and onion..red onion is my favorite for it's sweet taste. Whir in the blender and add salt to taste, and a little lime juice or cider vinegar. Very good on any mexican food. You can use all tomatillos and no green tomatos if you want too. Use banana peppers if you want less heat..it is still pretty mild with anaheims. I have canned it in the past, but don't have the exact recipe. It keeps at least a week in the fridge.
I used to always grow them in calif and havn't here. I don't know why. Next year for sure!

Diane is correct of course on when they are ripe. I slice mine, bread, and fry, when cool, dip in buttermilk type dressing.

I pick mine when the outer papery cover turns brown. The only use I know for them is fresh salsa. I have tons too and would love more ideas!!
