Ok, so I exaggerated a skoshe.

However, I do have an over abundance of the buggers. Can I freeze radishes?? Help!

I have a version of waldorf salad that uses radishes:

Apple and Radish Dressed with Miso Mayonnaise

Dressing:
2 tsp white miso
sprinkle of sugar
1/2 Mayonnaise
1 Tbls white vinegar

2 1/2 tablespoons toasted walnuts (toast in a dry pan or in the microwave on low)
3/4 Cup red apple
salt
2 1/2 cups Radish

1. In bowl mix the dressing ingredients. Toast walnuts and roughly chop
2. Wash apple and quarter but do not peel, core and slice thinly long ways into 1/10 inch thick pieces. Soak in lightly salted water. Slice the radishes into 1/10 inch thick pieces.
3. Drain apple and pat dry, toss apples and radishes with dressing, place in to small bowls and sprinkle nuts over top.

Radish Jam
2 cups (about two 6 oz bags) finely chopped radishes
2 and 1/2 cups sugar
3/4 cup water
1 box pectin
2 teasp. prepared horseradish
In a large stockpot, combine first 3 ingredients over med-high heat. Stir constantly until sugar dissolves. Bring to a rolling boil. Add pectin; stir until dissolved. Bring to a rolling boil again and boil 1 minute longer. Remove from heat; skim off foam. Stir in horseradish. Ladle into 1/2 hot half-pint jars leaving 1/4" head space. Cover with hot lids and screw bands down tightly. Either boiling water bath can for 10 min. or place in fridge.
Serve with cream cheese and crackers or meat.
Makes about 2 pints of jam..or 4 half-pint jars.

OK Dawn, I only know about this because of my low carbing diet tendencies, but I have tried this & they are yummy.. Slice the buggers, coat with olive oil, salt pepper or whatever floats your boat, & stick in the oven much like you would french fries.. They really do taste like fries w/o the carbs!

Somewhere I have a recipe for radish jam..really! It was good...especially with meat. I can look for it if you want. It is always so fun to hear things that are common in other countries...Corinne...pickled radishes sound good!

We pickle them in France. They are wonderful eaten with frech made bread and butter. I sometimes make salsa with them, they give a bit of fresh crunch to the sauce.

tee hee hee. With an avalanche of them, you have got to do something with them, haven't you? I don't see any freezing recommendations in my canning book, but what if you pickle them? I'd freeze a few, just to try it out, and then get your favorite pickle recipe (or do an on-line search) and see how that turns out.

I let a bunch of mine bolt, and then harvested the seed pods while still green. Added them to stir fry. Yum. Got the idea from the Outpost book. :) Love MJ!
