Hey there,

I am attempting to make the apple pie filling from MJ's ideabook(picked the apples from a friend's tree, already ripe here in So Cal). I just pulled the jars from the water. They are all oozing. Not enough headspace perhaps? I left 1/2 inch, even measured it...Also heated the jars and lids. Anyway to salvage it? Can I do a re-do? I didn't run into this when I made applesauce and apple butter last week. Any words of wisdom?

The other thing that came to mind is air bubbles. Air bubbles can often cause liquid to escape. I always tap my jars and run a knofe to get rid of air bubbles.

Too be sure, call your local county extension office. You dont want to take chances with botulism.

Stephanie, I never boil my lids. Just get it almost there then take it off the eye. It sounds like they are all ok and did seal. I never can wait 24 hours. I have a need to touch and move the jars around. I do wait til they've cooled enuf to do that, though. Also don't have very much counter space to leave too long. Gotta move 'em out as soon as possible.

I thought that was the name of a town. So it's the mt. name? And do you know what the name means?

Hey Sister 17,

I did carefully clean the rims before putting the lids on, and I heated the lids in a pan of water on the stove. The water was too hot to touch, but not boiling. What do you think it too hot? Do you have a better method for heating them? Is it really necessary?

Wahoo! They look like they sealed! I am trying not to move them around yet, I think I read to leave them set for 24 hours. I didn't hear them pop, but the lids are all down. We'll see tonight!!!

Rubidoux is the hill/mtn in town, and it still has the cross on it. We just moved here about 6 years ago ("just", feels like we just moved :) )We've found some great people here, though no one who's canned apple pie filling ;)

Perhaps the rims of the jars were not clean (bits of pie filling on them) when you placed the lids on. This can create a space where it oozes and doesnt seal properly. Did your jars actually seal? Did you hear them pop? Also when you heated the lids - how did you heat them? Sometimes if you heat them too much they can loose thier sealing ability.

Hey Stephanie. I just saw this. I was thinking they might be ok after they cool down. How do they look today? It sounds like you left enuf head space. Maybe it was so thick it had to ooze a little.

I lived in Riverside a while when I was a kid. And isn't there a place near there with a mountain with a cross at the top? Seems like it was in Roubidoux or something like that. I know I didn't spell that right. But I remember it was lit up at night.
