I have a ton of cucumbers and I don't know what to do with them. We didn't plant any dill until just the other day. I thought maybe my neighbor would have some but she didn't. Does any one have any recipes or suggestions for me. I don't want them to go to waste. I have given some away already.

I've never canned the japanese pickles, I don't think they have enough acid or brine. The acid content of rice vinegar is rather low, maybe it you use cider vinegar instead it would work?

Anna - is there any way the Japanese Pickles can be canned?
I make a cucumber salad with onion rings, and can it for future use. It seems to hold up well. I was going to suggest the Mock Apple Rings, but after reading the Cinnamon Pickles, it is the same recipe, just not cubed. All of the posted recipes look great. Thanks to all for sharing. I'm sure anyone that grows cucumbers is looking for new ways to use them.

YEAH! MY NEIGHBOR AND I MAKE DILL PICKLES YESTERDAY! THIS WAS MY FIRST TIME TO DO IT. IT WAS PRETTY EASY! I HAVEN'T TRIED ANY YET BUT HOPE TO TOMORROW. WILL LET YOU KNOW HOW THEY ARE!
THANKS FOR ALL THE RECIPES! I WILL BE TRYING THEM OUT BECAUSE I HAVE A TON MORE COMING. JUST WENT OUT AND PICKED SOME MORE THIS EVENING. MY DH THOUGHT HE PLANTED CANTALOPE BUT PLANTED EXTRA CUCUMBERS.

We love a simple cucumber salad which consists of sliced cucumbers, pepper, salt, a couple teaspoons of sugar, and about half apple cider vinegar half water near the top of the cucumbers. Chill in fridge a couple hours and serve with a slotted spoon. This tends to be a side dish in our house several times a week when our garden is producing a lot. Also just cut up cucumbers with salt. We could go through several cucumbers a day in this house...can't wait until mine are ready!

Here is a good one.

TERRAGON PICKLES
6 qts sliced cucumbers
3 med size onions,thinly sliced
1 cup pickling salt
3 cups cider vinegar
4 1/2 cups white vinegar
1 cup honey
1 cup olive oil
1 cup water
6 Tbls celery seeds
6 Tbls mustard seeds
6 sprigs tarragon
6 cloves garlic
Combine cucumbers and onions in a large glass bowl. Sprinkle with salt. Cover with cold water. Let stand several hours or overnight.
Drain and rinse well with cold water. Combine vinegars, honey, olive oil and 1 cup water in a large sauce pan. Bring to a boil, simmer 10 min. Into each clean hot quart jar, add 1 Tbls each celery and mustard seeds, tarragon and 1 garlic clove. Pack with cucumbers and onions, cover with hot syrup, leaving 1/4" head space. Seal with ring and flat. Process in boiling water bath for 10 min. Store 6 weeks before opening. Makes 6 Qts.

I do mine in pints. Adjust accordingly. The juice makes wonder salad dressing with it's Vinegars, olive oil and honey.

REFRIGERATOR - CUCUMBER PICKLES  
7 c. sliced cucumbers
1/4 c. sliced green and/or red peppers
2 tbsp. celery seed
1 c. sliced onions
2 c. sugar
2 clove garlic
2 tbsp. pickling spice
Mix all ingredients together in a gallon jar or a 5 quart ice cream pail. Refrigerate. Keeps indefinitely.

I love pickle making. I have an easy bread and butter pickle recipe that I will post tonight. You can even use small zuchinni in place of cukes in this one!
I sure hope my cukes do well this year..just starting to get blossoms on them...they are small still. We havn't had much sunshine yet.

I have made dill pickles using dried dill. I got it at the local Amish store, and put about 1 tsp. in each jar. They turned out fine.
Also, I didn't plant dill this year, and when I got some cukes, I found organic dill weed at the wal-mart, of all places, for a few dollars. Worked fine.

Those recipes sure sound good! I'll have to try them. I don't have any cucumbers in my garden. DH decided there wasn't enough room to plant them. LOL

I got this recipe from my son-in-laws grandmother. We love them.

Cinnamon Pickles

Peel and core large cucumbers - I usually cut in half lengthwise and scoop out seeds. Slice into chunks. To 1 gallon of cucumbers, mix together 1 cup lime and 4 1/2 quarts of water (or enough water to cover). Let stand for 24 hours.

Drain cucumbers and wash/rinse in clear water. Soak in cold water for 3 hours. Drain again. Combine 12/cup vinegar, 1/2 bottle of red food coloring (or judge color), 1/2 teaspoon alum, and enough water to cover. Add cucumbers and simmer for 2 hours. Drain.

Bring to a boil 1 cup vinegar, 5 cups sugar, 1 cup water, 4 cinnamon sticks, and 1/2 cup red hot candies. Pour over cucumbers and let stand overnight.

Drain - reserving brine. Reheat brine for 3 days, the same way, each day pouring over cucumbers and leaving overnight. On the 4th day, heat cucumbers with the brine. Pack into jars and seal.

Recipe times 2 yields 9 pints.

I know this is a time consuming process, but so worth it. I don't use a 1/2 bottle of red food coloring - you will have to experiment and adjust to your liking. Enjoy!!

Tsukemono!! (Japanese Pickles)

1/2 Cup cucumber, sliced in half with the seeds scooped out and then sliced thin into half moons
2/3 Cup carrot: sliced in half lengthwise, cut into 1 1/2 inch lengths, then sliced long ways again into rectangles
4 or 5 cabbage leaves cut into bite sized pieces
1 tablespoon fresh ginger
1 teaspoon salt
1/2 tablespoon superfine sugar
1 tablespoon rice vinegar

~ Prep veggies, peel ginger and cut into match sticks
~ In container mix cucumber, carrots, cabbage, salt, sugar and vinegar, put a plate on top and weigh down with a can of tomatoes. Leave for 10 hours or overnight
~ Before serving, squeeze out any excess liquid by hand. Place in small serving dish and sprinkle with dried fish flakes (katsuo bushi) and ginger. Drizzle with some soy or ponzu sauce and serve.

I eat cucumbers almost daily mixed with greek yogurt, dill and salt. Most yummy.

I also love this salad.

Israeli Chickpea salad
Ingredients
1 cucumber, seeded and diced
1 green bell pepper, diced
3 large ripe plum tomatoes, seeded and diced
1/4 cup chopped bermuda onion
1 (15 ounce) can chickpeas, rinsed and drained
Dressing
4 tablespoons olive oil
3 tablespoons lemon juice
1/2 teaspoon pepper
1 1/2 teaspoons salt
4 teaspoons white vinegar
Directions
Combine vegetables.
Whisk together dressing and mix into vegetables.
Allow to chill in refrigerator for an hour or so before serving
