I am currently roasting the dandelion roots to make the dandelion root coffee that MaryJane mentioned in her publications. It smells so good! It smells almost like a really really rich honey! And as it has been cold and rainy here today- the heat from the oven is nice! I can't wait to try it!

Oh my gosh, Lisa! You should see my back yard. A sea of puff balls would not be inaccuate! I have a feeling that for every one that I dig up, another 100 are taking root! Yesterday the pile of dandelion greens that I decided not to use was a pile as high as Nora!

So far I have dug, chopped and roasted about a quart of finished root! I am pretty impressed! I am hoping to double that. I don't drink the mix everyday, but I can see how it will be really nice especially in winter.

Thank you so much for the information!! Our dandelions are ready for harvesting so I will be giving this a try over the weekend.
Right now we are busy cleaning up after the wind storm that hit yesterday. . . no power for the day, my baby chicks arrived etc.So now the sun is out, still breezy and at least on the warm side.

Haven't tried roasting the roots, but I did try deep frying the flowers. I didn't think they had
much taste, unless I fried them too long....but they tasted ok. Maybe I'll try this, I have lots of
dandelions.

Hi Cherry- I don't have a conventional coffee maker, so I just boiled it on the stove then used a small strainer to keep the bits out. I used a heaped tablespoon per cup and let it get to about the color of coffee before drinking.

What's your ratio then, Alee, for making the coffee? Did you use a conventional coffee maker?

Oh and the instructions are very easy-

Did up about 3x as many roots as you think you need (after choppting the tops off, I filled up a big garbage bag full of greens and I got maybe a cup and a half of finished roasted root).

Cut greens off and either use for salads, pasta, and wilted greens, or dispose of.

Wash roots. Use a food processor or a blender to finely chop the roots, or if you only use hand powered gadgets, just finely chop with a knife. Wash again if you would like after chopping, or if you used the blender method- let the excess water drain out for about an hour.

Then place on a cookie sheet and pop in a 250 degree oven until a coffee color. You can layer it pretty thick. Mine was just one really thin layer and it was done in half an hour.

It turned out great! Next time I am going to go for a slightly less dark roast though.

I use raw sugar and since I am not quite ready for bitter stuff without sugar in the morning that might change the taste a little- but it has that bitter coffee type flavor, but it also has notes of honey and chocolate in it. Very good. A complex flavor! I am very impressed!
