I just finished making it and boy is it good!! I love being able to make my own cheese to go with my home made crackers!!!
( My BF thought I was nuts at first. . . now that he has "seen" me make it, well. .. guess I'm not so nuts any more...LOL! )

Let me know if any of you have made this yet and if so, what did you mix in for your herbs??

Oh I wish I had thought to use my opps for scalloped Potatos!!
What a great idea, thank you for sharing that.

I will be trying this again today, off to pick up some cream.
At least if it flops, I will know what to make with it!

I have to agree about NOT Boiling. I made my first batch and it turned out great. I even remember the recipe wrong and only added
1 TB of vinegar intead of 4. But I stood by the stove the whole time watching and just when I seen bubbles took off the heat.

The second batch I wanted to do it the right way with all 4TB of vinegar. I hadn't gotten the vinegar out and just the time it took me to walk over to get the bottle. The milk had gotten to hot, just started to boil. I stired it to cool off a bit add the vinegar and left set. When I poured it into the strainer, I knew right away it wasn't right. The water that was running out was way to milky compared to the first time which was almost clear. Let it set over night and it just was like the texture of a runny sour cream. So I thought why not just flavor it with dill and garlic and I used it to make scalop potatoes. They turned our very yummy.

Plan on making it again soon. It is really is easy and very good.

You are so right!! My second try was a failure for that very reason, it had just begun to boil. So watch for the steam to start escaping and the little bubbles just beginning to form around the edge of the pan.

I know a farmgirl chapter who tried making it and low and behold did not turn out! They are going to try again but I think it is very important not to boil the milk like the recipe says and just bring it hot enough to seeing those little bubbles around the sides of the pan. Watch closely!

Is this from a new issue of MJF magazine or an older issue? I haven't seen it yet and am very interested in this recipe and all of the variations sound so good. Hope to hear from someone soon. I just got 2 milk goats and would love to try making cheese.

I am off to make another batch today. . . hmmmm thinking of adding strawberries . . . wonder when the alpine strawberries will be ready for picking?

My daughter and her friend made it while I was off doing something.....I came around to the kitchen and boy what a treat! They had put oregano, chives, mint, rosemary from our garden and a bunch of chopped up garlic in it....oh and olive oil, sea salt and cracked pepper. I ate it all day and the next morning with canned peaches from the apple blossom festival we went to in Hood River, Or. We have made it since and crave it the minute it disappears! Gotta try it!

Hi Merry, Sounds perfect! I used black pepper,salt,dash of basil-marjorum and wild garlic in mine... now I need to get busy making more of my homemade crackers

SarahJ, if you like, I would be more than happy to email you the recipe. It was so easy to do. . . I think it took longer to pull out the pan and measuring cup than it did to make it!

I have to wait until I've finished this course of antibiotics that I'm on...I'm supposed to avoid dairy while taking it, and no way will I be able to avoid that cheese!
