Do any of you have tried and true Diabetic snack recipes?
Having severe refluxe disease too.
It is hard to find things I can eat .
Sometimes
like this past week ; I just plain gave into it.
I didn't go hog wild ; but I had had enough of it.
If I could find some things that are truely yummy and good for my condition.
Any one have any thing to share?? hugs sheila

Hehehe Glad I'm not annoying you too much.

We just love those almonds! mmmmm

If you like more chocolate a Dove product, is out that is pretty good, it's dark chocolate covered almonds, by the brand name of Cocoa Via. They are usually in the pharmacy dept of walmart, but can be found other places too. They are pretty good too. :) I like them for a treat once in a while. But, stick with the Emerald most the time.

I know i keep coming back, I'm a type 1 diabetic, so I keep thinking of more that I normally eat. My favorite summer one-

1 cup of FROZEN unsweetened strawberries
1 cup of milk (I have tried this with all kinds of milk, it works with them all-Almond, soy, cow's, what ever)
1 teaspoon vanilla extract
sweetener of your choice (I personally use 4 packets of splenda, because the strawberries usually aren't very sweet, but if you freeze your own from the garden they may be sweeter then what I can buy).

Put ALL ingredients in blender first, then blend till smooth. This makes a VERY thick milk shake like smoothie, to me it taste just like a strawberry milk shake, that is super thick. Soooo thick, once it's blended you can't mix anything else into it, it's too thick! lol

It makes a HUGE smoothie, so it's either for if you are very very hungry, or want to share it with some one, OR split the recipe in 1/2. It makes a 20 oz smoothie though if done like above.

oh another thing about the acid reflux, I find mine does better if I don't let myself go too long between eating times.

Oh I almost forgot one more "snacky" type thing I love, hot tea. My favorite-

Celestial Seasonings Holiday flavor Candy Cane Green Tea
unsweetened almond milk
French Vanilla syrup (I use divince sugar free-can get this at Sam's too!)
and sweetener of your choice, I use splenda, but I'm sure you can use stevia or what ever sweetener you normally use.

It is soooo good and comforting. Sometimes I dust cocoa powder on top as well! (cocoa powder is sugar free, high fiber, high antioxidants, and low calorie!)

I like this with Miss Meringue Cookies (low calorie, low sugar, low fat), Popcorn, and various snacks. :)

I forgot one of my new favorites, is Emerald brand dark cocoa roast Almonds! They are so so good, and no sugar added. It does have starch added, but not much. I think most the ingredients are pretty good in my opinion (health wise) and they taste soooooooo good! I got a HUGE tub of them at Sam's (wholesale club) for only 10 dollars! It's huge! My whole family loves them really. We eat them a lot. Even my 2 year old loves them. Between their protein and healthy fat, it doesn't take many of them to feel satisfied. The cocoa powder on them, helps the old sweet tooth too!

It's not all organic, as she does use canned foods, and splenda, but I love Healthy Exchanges cookbooks-has diabetic exchanges.

My favorite simple snack is popcorn! I love my whirly pop (it makes popcorn on the stove top).

Plain popcorn is VERY healthy, as it's a WHOLE grain! High in fiber, which lowers how many carbs are actually recognized/used by the body, and slows down their digestion-IE less carbs put in the blood stream at a time.

I find 1/4 cup of unpopped kernals does just fine with 1 teaspoon of oil (versus the recommended 1 tablespoon). I find nothing wrong with oil, but still a tablespoon for a snack is a lot of a diabetics recommended fat total! lol

I put sea salt directly in my whirly pop with the oil and unpopped kernals and find I need a lot less salt this way! lol :) And it's soooooo good. 100 times better then air popped, and a thousand times better then microwaved!

I also like veggie soups. And roasted veggies. Both if low in fat, and made with low starch veggies, such as mushrooms, zucchini, broccoli, cauliflower, ect (you get the picture, go easy on the starchy veggies, like corn and peas) you can have a TON and really feel full, and satisfied.

One recipe I have used over and over came from Weight Watchers magazine, from Mrs Dash, put your veggies on a baking pan and preheat your oven very high-like 500 or more! And then spray with oil (you can get spritzers from like Pampered Chef, where you add your own oil and make it into a all natural oil spray!), and sprinkle with Mrs Dash and bake. I like mine baked till VERY brown, almost burnt, but not burnt...just right before it would be though! Mmmmmmm I eat it like popcorn too! Especially Cauliflower done like this. But, this works with Zuc and even okra too!

Then there is the old stand by, peanut butter. Contrary to popular belief, a all natural pb can be very healthy for diabetics, just make sure to measure it. 1 or 2 Tablespoons at most. But, put this on high fiber toast, or a apple, yummy!

Cheeses too, string cheese, and a pear is good.

I also like Laughing Cow cheese on crackers. And my favorite is Light Aloutte Cheese (like the garlic herb flavors) on All Bran crackers! YUMMY! HIGH fiber, and very good. Good carbs!

And don't forget sandwiches. Use one slice of whole grain bread, use mustard and the like liberally, easy on the fatty things like mayo, and use lean meats (my favorite is roast beef!) and heavy on the veggies, pile up the tomatoes, onion, and lettuce! Even cucumbers.

Speaking of cucumbers, I use them like chips! I love cucumbers dipped in hummus! Which is another excellent source of good carbs, high fiber and protein!

I have a friend that uses celery for dips too. Like she uses ground turkey, taco seasons it, and adds cheese, and instead of using corn chips like one would normally use with this dip, she uses celery! Sounds good to me!

like type of juice because of the refluxe disease
but I will try this it sounds good for the hot weather that is coming

Hi Sheila - My hubby and I are both Type II diabetic. I found the following on the internet a few years ago and it has become a favorite "warm weather snack".

YOGURT CREAMSICLES
Combine:
1/2 cup plain skim-milk yogurt (1/2 carb)
1/2 cup fruit juice concentrate, undiluted (3 carbs)
Freeze in popsicle molds until solid. I have the Tupperware popsicle molds - but you could use a small dixie cup.
The total mixture equals about 3 and 1/2 carb choices and makes about 4 creamsicles or 1 carb choice per creamsicle.
