Posted - Apr 20 2009 : 12:03:29 PM I made a quick black bean soup last night to kind of clean out the fridge and pantry a bit. So here is what I did:
I didn't have any dried beans, so I used 3 cans of black beans, one can of diced tomatoes, 1 medium sized fresh onion that I diced and carmalized. I let the simmer a bit and added salt, pepper, garlic and a bit of taco seasoning.
It was so good and since I didn't put any extra liquid in, It can be eaten as a hearty soup or a topping for some nice basmati rice :D

Posted - Apr 21 2009 : 11:20:37 PM If you're going to precook some beans to freeze, may I suggest using a crock pot? It uses less energy than the stove top and you just have to turn it on in the morning (I still do an overnight soak to prevent splitting the hulls. Change the water before cooking). I cook the beans plain, then portion and freeze with the liquid. I also recommend trying Rancho Gordo beans. They have great heirloom varieties and the beans are fresher so they cook up better.

Posted - Apr 21 2009 : 07:15:12 AM Beans freeze very well. In fact that is what we are having for supper tonight. Going to fry some potatoes, and hoe cakes and warm up the beans. They are navy beans (white) and I froze juice and all. Actually it wasn't juice, more like sauce, I had cooked them down pretty good. |

Posted - Apr 20 2009 : 1:21:29 PM Alee, next time add some organic chorizo and some roasted red peppers for a really wonderful full flavor! Black bean soup is a favorite in our house, especially Cuban style with a bit of sour cream or creme fresh and chives on top for garnish.

Posted - Apr 20 2009 : 1:00:45 PM Alee, sounds Great!!! I just realizes that dried beans are about 1/4 the price of canned so when I have some extra time (yeah right!) I think i will cook some dried beans, put them in 2 cup containers and freeze them. I'll let you know how this works. Don't know if I should freeze them in some of the cooking liguid or drain them. Any ideas? Michele
