I ran out of baking mix, my old standby, and wondered if I could make pancakes the labor intensive way. Welp, I found a recipe in my cookbook and made the little suckers. Hubby got the last of the baking mix pancakes and then I gave him a couple of the scratch ones. (They were pretty small, about 3-4 inches across) He said the scratch ones were far superior to the baking mix ones.

Okay!! So now I will have yet one more mix stuff in my fridge!

We have a family favorite that i actually got from a friend over on homeschoolblogger.com
The pancakes are filling and really yummy! You have to use real maple syrup on them and fill them with berries. It's so good! They are the most wholesome and filling pancakes you will ever eat!

She's a great Minnesota gal with loads of kids! I think you'll agree that this is a winner! It sure is in my house! My kids are 10, 8 and 6 and don't bat an eye at whole grain, whole wheat pancakes! We have them several times a week and I always make up a huge batch of the mix. It takes minutes to make in the morning!

I just love the "from scratch" pancake recipe on the back of the dried buttermilk package. The waffles are good also.
And anyone that wants to make them for me--I'm game to try. I had never thought of coloring them, but it's a real good idea.

I have made from scratch pancakes fo ryears, I make up a dry mix and ada egg and or water and whatever else it takes....my family/
grandsweeties..love them....they call them "Grandmas Pancakes"(of course I color them whatever color they want)>...

you can buy a quart or 1/2 gallon of buttermilk and freeze the remainder in 2 cup increments, in the freezer,
for future batches (makes for good waffles, too!).

I don't think I've ever had pancakes made from scratch but I'm sure they are scrumptious!!! Great job!

here is my recipe:

2 eggs
2 cups buttermilk
1 tsp. soda
2&1/4 cups flour
2 tsp. baking powder
1 tsp. salt
2 tsp. sugar
4 TB. oil
Beat eggs well, stir in buttermilk. Mix next 5 ingredients and add to egg mixture, along with oil. Sometimes I add a little vanilla...or blueberries, etc. Enjoy!

I love from-scratch pancakes. I make the recipe from Fannie Farmer called "Griddle Cakes". I don't know how she gets 16 out that recipe, though, so I usually end up with 6 medium sized pancakes :)
