Because I'm home on maternity leave, I'm watching an enormous amount of cooking shows and yesterday, on Rachel Ray, she had this little bit about breakfast biscuits. Basically, you could use your biscuit mix, but she's all about the "quick" and used store bought mix.

Add whatever you would normally eat with breakfast (sausage, bacon, scrambled eggs, cheese...I would even put some jalapeno's in there) and mix it all up according to the package directions and bake them. Viola--breakfast on the run.

I thought it would be great for me when I go back to work--all in one, and I can drive with it . And I just thought...yum AND easy, AND good for you depending on what you put in.

you can do the same thing with cresent rolls, cheese sausage, mushrooms, etc. I also do it with homemade biskits, and like some other have said, freeze them and nuke in the morning or thaw out and heat in foilwrap in the oven.

Being in the south I am a biscuit freak! Lately I have been making meat muffins. I like all of your ideas though!

Having this extra bit of protein in the morning makes such a difference! I use a yeast dough recipe to make "pockets" like Tamara described, filled with an egg and ham scramble. I bake them, with an egg wash on top so they turn golden brown, then freeze. I like the bread taste better than the biscuit taste, myself.

I know, Pam...with the addition of our little girl, Violet, our mornings get a little wild. Luckily for me, I'm a 2 minute make-up girl, and a 30 second hair girl (just comb and go!)...often, cereal just doesn't cut it so I was really happy that I caught this on her show. Only thing is, with a newborn and my husband working nights, I haven't had an opportunity to make them yet!!!

Wow - that sounds so good. Thanks for posting - my mornings are hectic no matter how hard I try to get up a little earlier. It would be great to have some of these on hand for the microwave (hey - I might actually use the dumb thing).

I make a real quick version. Use canned biscuits roll each biscuit our into a nice size little circle. Place a couple of spoonfulls of your cooked eggs & sausage or other breakfast combo,( or barbeque, or chilli, or hamburger & cheese or.... you get the picture) in the center fold over and seal by pressing down. Bake until golden brown and the freeze in large baggies. Great on the go.......
