I need some help in cleaning out my freezer! Planting season is just around the corner and I am telling myself that I must get rid of last year's harvest before I add more. So.....here is what I need to find delicious,creative, kid-friendly recipes for:

Lots of roasted anaheims and poblanos
Shredded yellow squash
Blackberries
Corn

I think I am going to go search through some food blogs and see what I come up with.

Chile rellenos for sure...I put a "stick" about like the size of 1/3 of a string cheese inside each chile, roll dip in beaten fresh egg and "oven fry" sprinkled with salt, and seasoned pepper. You can also put a whole layer of the stuffed chiles in a 9X13" baking pan and cover with beaten eggs, season and sprinkle with cheese and sliced black olives and bake until set and serve cut into squares...a yummy breakfast dish with just some toast on the side.

OK, I think I am going to have to find a good recipe for squash casserole and maybe experiment and see if the squash works in zucchini bread, too. Surely it would.

Melanie~This squash is more like zucchini. I would be very happy if I had more pumpkin or winter squash in the freezer. Pumpkin muffins and bread are my favorite!

Victoria~Your idea sounds delicious. Maybe tomorrow night...

Anyone have a good recipe for chile rellenos casserole? I'm going to try that one of these nights to use up some of the peppers.

Saute the squash wih garlic onions and sweet pepper, lots of EVO( maybe some Italian sausage) and serve with pasta!

How about roasted squash with a little brown sugar? Or mashed up...

And blackberry pie and ice cream are always kid pleasers. :)
