I haven't had a chance to read through the site yet (saving it for when I have time to give it my full attention), but I do know that it's recommended you not prepare fresh veggies or fruits more than 2 or 3 days in advance of eating it. Once you prepare it, the nutrients, etc., start to dissipate.

I usually get fresh produce once a week and prepare for the first part of the week on Sunday. Then on Wednesday, I fix the remainder for the last 1/2 of the week. It takes a little more time, but not enough to be a problem.

I have one problem with this article - the note about glass jars not retaining smells of previously stored goods - that hapens to me all the time? All the scalding, baking soda, and vinegar in the world cant keep the smell out. I have to buy new jars every year. What gives?

Great article Sara...I should use some of those ideas!! We are big fruit and veggie eaters..but just having all the prep work done ahead would make it so handy during the week.
