Has anyone made their own mayo? It is so easy to do. Here is a recipe you can try. It's very easy and just takes a few minutes to make.

Blender Mayo:

1 egg or 2 egg yolks
2 Tbls. lemon juice or cider vinegar
1/4 tsp. salt
1/2 tsp. dry mustard
1 1/3 cup oil ( and I have used several different kinds of oil with different results and have found Safflower oil to be the best)

Combine egg, lemon juice, salt and mustard in blender. Blend together for about a minute.

Gradually add oil slowly. scrape down sides of blender til all is incorprated.

Spoon mayo into glass container and refrigerate.

This is the only mayo I use anymore because I don't want to use soy oil and all store bought mayo is soy oil.

This came from the old Rodale Cookbook from 1973, but I love that book.

Lynn, I have no idea about that. Maybe someone who knows will see this and tell us. The egg, oil and lemon juice are what thicken it. So I don't think a cooked egg would do the job. Why not try the 2 egg yolks?

Kris, I've always wanted to try to make mayo but never found a recipe for it(dummy, I never looked online) but I'm going to try your recipe.

I have a question. I am not fond of the idea of raw eggs. Is there a way to get around this such as soft boiled, cooked, etc.?

I don't use mayo on a regular basis either (mostly for what you posted) so I was concerned about shelf life. That sounds perfect and I will probably be trying the recipe soon :) Thanks again :)

Sharon, it will probably last a few months but we use it pretty fast. It only makes 1 1/2 cups so it's not much.

And I had to put it in a store bought mayo container when I first started making it til my hubby realized how much better it is for us than store bought. We don't use it alot, but when I make tuna or potato or egg salad, it goes quick. But it's so easy to make.

I love homemade mayonnaise. It does taste so much better than store bought. Only I have to put mine in a store-bought jar when I make it in order to get my family to eat it! lol

I have, and I actually like it much more--it reminds me of England, actually and the "salad dressing" I always had. I made it a couple of weeks ago when we were snowed in because we both wanted tuna salad, and found that we didn't have any mayo. Easy, just takes a little patience!
