I was wondering what to make for supper yesterday and my neice said when in a hurry she makes a quick chicken dish. I have it posted on my blog site with pictures but I'll just type it here.
1. cut up chicken into bite size peices and cook in a little oil.
2. add salsa, heat
3. shredd cheddar cheese on the top, heat
4. place on a roll and enjoy.
My DH even enjoyed it. I'll have the leftovers for lunch, if I don't eat it for breakfast.

Diane, I came up with something similar when I was in a hurry and nothing was even thawed (I just don't think about dinner early in the morning). I take chicken breasts out of the freezer (usually in a package of 3), put them (still stuck together) in a covered casserole dish, dump salsa over top of them and bake for 1 hour at 350. Remove from oven, add shredded cheese on top and cover til melted. The heat from the chicken and salsa is enough to melt the cheese without having to put it back in the oven. Serve over rice mixed with corn. Everybody always loved it and it's very filling.
