Posted - Mar 16 2009 : 11:11:55 AM i think of cajun and creole as similar, but for some reason i think of cajun as "hotter".....i don't know why....... anyway, i do love all kinds of spicy food and the hotter the better!! |

My mil is mexican so my husband grew up eating mexican food so every week when I plan my menu I have a day of Mexican food, and a day of cajun food. |

Posted - Mar 03 2009 : 04:51:53 AM Melody, falafel is garbanzo beans processed in the food processor with parsley and some other stuff then made into balls and deep fried like hush puppies. Muffaleta is a sandwich made with cheese and cold cuts and a wonderful Italian olive salad. Will post recipes later. Kinda in a hurry. |

My husband loves anything Cajun and or Creole... He has people not far from New Orleans and he is 1/2 French to boot, hence the Etuffee![](icons/icon_smile_approve.gif)
Every New Years eve I make him Hoppin John...but I think that is more Southern than Cajun? Not sure.... I was born in Texas and grew up on Hoppin John, fried potatoes, pinto beans, cornbread and ICED TEA!

Étouffée or etouffee is a Creole and Cajun dish typically served with shellfish or chicken over rice, similar to gumbo, very popular in New Orleans and in the bayou country of the southernmost half of Louisiana.

Posted - Mar 02 2009 : 11:49:11 AM One of the Sandra Lee episodes on Food Network featured Reggie Southerland. They cooked Grits that calls for creole seasoning and Fried okra that calls for creole or cajun seasoning. They also cooked andouille sausage creole that has lots of seasonings but did not call them creole seasoning. I get all my spices from Penzey. They only have cajun seasoning. It is a mixture of no less than 20 herbs and spices.

Cajun-(N) A member of a group of people in southern louisiana descended from french colonists exiled from acadia in the 18th century.
