I finally made this recipe tonight! I had been so intimidated when I read it but it so easy to make! I think I will be making this every Sunday!

One comment though- The 3 tablespoons of batter makes a BIG crepe so next time I am going to use only 2 and use my smaller pan.

Also instead of making a glaze from a fruit jelly I took equal parts of honey and water! It worked great!

Yield: Makes about 8 servings (about 16 blintzes)

Blintzes are thin pancakes that traditionally encase a rich cheese filling. They are similar to French crêpes, but are browned on only one side.
Ingredients:
3
eggs

1-1/4
cups milk

1
cup all-purpose flour

1
tablespoon cornstarch

1/2
teaspoon salt

1/2
cup butter or margarine, divided

1
container (15 ounces) ricotta cheese

2
packages (3 ounces each) cream cheese, softened

3
tablespoons sugar

1/4
teaspoon almond extract

Fresh fruit or cherry pie filling

Sour cream (optional)



Preparation:
1.
To prepare blintz batter, combine eggs, milk, flour, cornstarch and salt in food processor or blender container; process just until smooth. Pour into 1-quart glass measure; set aside.

2.
Coat bottom of 7- or 8-inch nonstick skillet with butter. Heat skillet over medium heat until butter sizzles.

3.
Remove skillet from heat. For each blintz, pour about 3 tablespoons batter into bottom of hot pan, swirling pan to cover bottom. Return skillet to heat. Cook 1 to 2 minutes or until bottom of blintz is browned. Invert pan over large heatproof plate, flipping blintz onto plate. Rub butter over browned surface of cooked blintz.

4.
Repeat steps 2 and 3 with remaining batter, stacking and buttering cooked blintzes on plate.

5.
To prepare cheese filling, beat ricotta cheese, cream cheese, sugar and almond extract in large bowl with electric mixer at medium speed just until blended.

6.
To fill blintzes, place 2 tablespoons filling in center on unbrowned side of each blintz. Fold in sides about 1 inch, then fold in opposite edges to enclose filling and form rectangular shape.

7.
Melt 2 tablespoons butter in large skillet over medium heat. Add blintzes in batches and cook 2 minutes per side, until heated through.

Melody- I bought our Cast Iron at Target about 10 years ago for I think $12! It came with three skillets- from small to large. They are great. Nice and hefty!

Alee, I never thought of that and besides my temperature would maintain at the right level too. All my skillets are huge though. I will have to keep a look out for a smaller skillet.

PS- If you are looking for a firmer filling use a bit less Ricotta. Mine is really soft and I like a little firmer.

Melody- I just used my cast iron skillets! They are so easy! And non stick because of the seasoning on them the crepes just popped right out! Give it a try! You might be surprised!

When the kids were younger on Saturday nights I would make Swedish pancakes...same concept of your basic blintz....very thin very light pancakes. We would spread homemade jam on them and stuff ourselves. Every once in a while my son Elli wants crepes, but I wish I had a decent crepe pan to use it would be so much easier!
