this is a wonderful recipe to take to potlucks, etc. there is never any left for me to bring home.

1 cup dry macaroni
1 can Rotels
1/2 cup chopped onion
1 can cream style corn
1 can whole kernel corn, undrained
1 cup chopped Velveeta
1 stick melted oleo
Salt and pepper to taste(I use a liberal amount of coarse ground black pepper...the coarse ground seems to make a difference in the taste).
Mix all together and pour into a greased 10 x 10x 2 casserole dish. Bake one hour at 350 degrees covered, then take off cover and bake 15 minutes longer.

glad that it was a hit for yall! yea belle...we like a little more cheese too so I usually put a little more in. in fact...I hardly ever really follow a recipe,lol. always have to add a little extra here and there....

Darlene, I fixed the Mac/corn casserole on Sat. Had company over. It was a big hit! Our friends ask for the recipe so it is making the rounds. Along with the casserole, I fixed country style pork ribs in the crock pot. It was a new recipe also. 1/3 cup soy sauce, 1/3 cup orange marmalade, a little garlic and onion, a couple of tablespoons of catsup. Fixed some cole slaw and made a blackberry cobbler. Dinner was a winner all around.

I just had to tell you I cooked this with dinner tonight and it was great! Even my husband who hates casseroles loved it! LOL. Thanks for a winner!

it goes with just about anything Belle! I don't use that much onion in mine but we aren't big on onion!

Darlene, wrote down the recipe. Now waiting for the beer drinking grandsons (re:beer bread topic) to come for dinner. Sounds like it would go with anything cooked on the grill.
