I can't eat white flour so can I use spelt flour?

Elizabeth, did you have a trick to getting your mother to ferment alright with the spelt flour, or did it just work straight out of the bag?

It turned out great! My sister's apartment tends to be chilly and she doesn't have a light in her oven so I turned on the oven and warmed it up just a little, put it in and let it rise for the day. Baked up really nice and it tastes so good!

Sorry for the delay in reporting back! The first week it didn't turn out, similar to the others it just didn't rise. Started growing some black stuff on the side of the bowl so I started over again two weeks ago and didn't bake the first week. So today I mixed up the bread and it's at home *crossing my fingers* rising. I'll report back to let you know how it turns out.

I just started mine with spelt flour last night and it's bubbling already. I will keep you updated as to how it works out when I go to bake it this weekend.

Amy,

How interesting that you work at an organic food store. I bet you have heard some interesting health stories. Care to share some stories to help others get healthier?

My homeopathic/nutritionist doctor tells me spelt flour/breads are protein not starches so he even recommends white spelt flour. I've made breads with both and they are equally delicious. I just wasn't sure if spelt flour would work to make the "mother." I just have to avoid all refined/processed foods.

It took me 9 years and eight neurologists before the correct blood work was done. That was almost six years ago. It has been 10 steps forward and one step back (every once in awhile) since then. I couldn't walk, talk, think, or swallow my own saliva (alternating combination of these symptoms though). I was a zombie!

Eziekel bread has gone up to $6.50 a loaf at the local health food store and not much lower at Dierberg's. Way to expensive for me so I'm back to making my own breads.

I wonder if anyone else has tried spelt flour????

That's interesting LynnMarie - I work in an organic food store and I used to run the bulk food section so I have helped lots of people with a variety of dietary issues but I hadn't run across that one yet. I think that the processed foods we eat definitely affect our health in ways we have no idea about - you must have a pretty perceptive doctor, which is good!!
Anyhow, whole spelt flour is like whole wheat flour - watch out though because there is a white spelt flour too, milled and packaged by the same company

Thanks Amy. I wasn't sure if spelt flour would work.

I can't eat processed/refined foods because such foods coat my gut (like a flour and water paste) and therefore nutrients/vitamins aren't absorbed. Due to my maternal family having liver problems, I cannot store B12 and folate. I have to have 1000 mc of B12 every day and 800 mc of folate. I can eat wheat germ so gluten is not a problem.

That depends on why you can't eat white flour. If you are trying to avoid processed foods like white sugar and white flour then whole spelt flour would be okay. If you are gluten intolerant then no, because spelt contains gluten. Some people who have wheat sensitivities can tolerate spelt
