I'm bored with pasta and potatoes. Tonight we're having pan-fried tuna steaks with honey-ginger-soy glaze and sauteed pineapples, and some kind of green vegetable (I have broccoli in the fridge. Any idea for a rice side dish, maybe with a tropical bent to it, that would go with this? Nothing with meat in it, please. Dairy is ok.

Red beans and rice? Or look up a recipe for gallo pinto...Nice dish with black beans, rice, cilantro, red bell pepper...great with a fried egg. How about fried rice? Or just season the water you boil the rice in with stock, herbs, veggies.

How about Rice and Veg Pilaf (not sure of the spelling). Cook your rice then add finely chopped broc, carrot, onion or what ever veggie you have. Add some pine nuts or walnuts and some herbs and s&p. Cook for another 5 min till the veggies are tender/crisp. This is one of our favs.

What about a wild rice but cooked without the seasoning packet. Pour a little of the glaze over the rice before you serve it instead. You could even stir in a well beaten egg while it is on the heat for a "fried rice" type dish.

Lime rice
I just put the rice in a the bottom of a glass baking dish, cover with stock or water, add juice of one lime and maybe some grated skin, salt, pepper, even ad a dash of that pineapple juice. Bake, coverd, at 350 for 30-40 minutes.
