While in the celler this a.m., I found 3 cans of Ro-tel tomatoes. All three were past the "best if used by dates". So I started looking for recipes to use up the tomatoes. Went to Ro-tel's web sight and found tons of great sounding recipes. After I printed off 4 of them, I realized I was going to have to buy MORE Ro-tel to make them. So I stopped printing. The recipes that sounded the best were Spicy Black Bean Salsa, South of the Border Mac and Cheese, Cowboy Nachos, Creamy Chicken Tortilla Soup. I also have a really good Cabbage soup recipe that has ground beef and ro-tel in it. Any Ro-tel recipes you have and would like to share?

I make rice-a-roni, when done I add some cooked hamburger, a can of Ro-tel and mix together for a great hot dish to take to pot-lucks. I always get requests for the recipe! Really tasty!

I LOVE Ro-tel but have only used it for the Velveeta cheese dip recipe....but you have just opened my eyes to a whole world of possibilities and their website too! Thanks!

I LOVE Ro-tel!!!! I don't have a specific recipe for it, but what I do is when I make something, say like chili, when the recipe says to add a can of diced tomatoes, I always add Ro-tel. It just gives whatever I'm making that little extra zing! I will visit their website and see the recipes there!

I use ro-tel in tossed salad. I just drain the juice off and it works well for tomatoes in the winter when the ones in the store have no flavor.

I mix it with rice, some chopped leftover chicken, a can of mushroom soup and lots of cheese. Put into a caserole dish. Top with stale broken tortilla chips and more cheese and bake until the cheese is bubbly. We call it Mexican Chicken. It is also a great substitute for a can of chopped tomatoes in a veggie soup.
