This is a recipe that I've had several requests for from friends and hubby's coworkers, so I thought I'd share...
These are the quantities I use at Christmas time - they can easily be scaled back... Makes 12 6x3 mini-loaf pans, or 4 9x5 regular loaf pans (it also freezes pretty well, so keep that in mind before you decide to scale back)
6 eggs
3 cups white sugar
1 whole stick Crisco butter flavor, melted
1 whole stick Crisco plain, melted
1 quart eggnog (use the real stuff in the carton, the richer the better - last night I used custard nog - Southern Comfort brand works very well, too)
1/2 cup real rum (Captain Morgan)
1 tablespoon vanilla
7 cups all-purpose flour
2 tablespoons baking powder
1 1/2 teaspoons salt
2 teaspoons ground nutmeg
Preheat oven to 350 degrees. Grease bottom only of loaf pans. Beat eggs in a large bowl. Stir in sugar, melted Crisco, eggnog, rum, and vanilla. In a separate, very large bowl (I use the ceramic insert for my crockpot), combine flour, baking powder, salt and nutmeg. Stir eggnog mixture into flour mixture, only til combined (a few lumps are ok). Pour into prepared pans (only fill about 1/2 to 2/3 full). Bake large pans for 60-70 minutes, or til golden brown on top, and knife inserted in center comes out clean. Bake smaller pans for @50 minutes (follow same guidelines). If using smaller pans, it is helpful to put them on cookie sheets, 3/sheet. Cool in pan for 10 minutes, then turn onto wire rack and cool completely. Wrap tightly in plastic wrap, and store in the refrigerator. Plastic wrapped loaves could then be wrapped in foil, and either frozen (put in a freezer bag too), or tied with ribbon for gift giving. I bake the loaves right in the pan they are given in and cool them completely without removing them from the pan, then just a zip top bag, which is what I did for hubby's Village Board meeting last night (I made a loaf for each of the 6 Board members, the Village Clerk, Village Administrator, Village Attorney, and Chief of Police).

If you have "issues" with the Crisco, you can use half butter and half vegie oil or all butter, and while it's still good that way, it's just not the same. I personally avoid it all year, but when holiday baking comes around, there is no substitute for Crisco.

You can use rum extract - I just prefer the flavor of real rum - or more vanilla.

It does, doesn't it! I never thought of it that way, but you're right. I love it because it is good warm or cold. It's phenomenal warm with a bit of butter and some homemade cherry or strawberry jam. MMMM to die for!
