Every year for Christmas, my husband's family does a Christmas brunch. We joke about it being a 'meat-fest': sausage, little smokies, steak, then hash browns, eggs and toast. I'm not a big meat eater nor do I eat eggs. I told my mother-in-law I would bring a non-meat item but am having a difficult time finding somthing that isn't an egg-based casserole. I've thought about making pancakes but just don't want to get in the way in the kitchen.

If anyone has any ideas, I'd love to hear them.

Thank everyone for your ideas. I love the fruit salad idea. I asked my husband what he thought and was surprised at his reaction. He said that fruit salad would be WONDERFUL! Wow! I have a trifle bowl that I've never used for food (it just holds apples and bananas on my counter) so it will look beautiful!

Oh! I have a wonderful stratta that has no meat, but it's made with eggs. Sorry...eggs are kindof "brunch" food.

Cheese grits are good, as is real oatmeal--steel cut oats with fresh cream, pecans, brown sugar and cranberries. That's something you can bring in a crockpot as well.

I have taken a fruit salad to easter brunch before that gets eaten immediately. It's strawberries, grapes, kiwi, honeydew melon and blueberries. You mix a 1/3 cup honey, 1/3 cup fresh lime juice and 1/3 cup chopped fresh mint and it's out of this world. Everyone loves it, even my husband, who doesn't like fruit!!

Bring a fruit salad. Refreshing, brunchy and you can use yougurt and honey as a dressing or if you don't care about calories whipped cream. You can make it tropical with pineapple oranges and bananas or use apples, oranges and bananas.Some people use canned fruit; I usually use fresh; sometime even put in a can of mandarin oranges.Everytime I make this it gets eaten pretty quickly
