My Great grandma made an egg dish called irish schmear. THat is how it sounds. She called it this cuz you schmear it on your bread. THat is how she said it. It was sooo good. It made the scrambled eggs easy to spread on your toast. You add a little milk to your eggs and beat them, then you add about 2 T flour. It will be lumpy but thats ok. Add salt and pepper to taste. Cook like you would regular scrambled eggs. serve over warm buttered toast.YUM!
Ever heard of this? I would love to hear of similar dishes?

for 3 eggs
1/4 c milk
2 T flour
. this is coming from a woman who didn't own measuring cups or spoons. you can add a little more or a little less. It is supposed to have little flour balls across the top of the eggs . Just a thin layer completely covering the top. I hope this helps.
