In a catalog which I got today they were selling smoked salmon canned in mason jars. Anyone know how to do this? My husband raises trout and so we occasionally have smoked trout around, but have to freeze it; canning sounds so much more convenient for using! Anyone know? Thanks!

Our son catches abundance of salmon most years, smokes it and then I can it. It's so much better than the plain canned salmon. Really good for salads & sandwiches. Of course with a gourmet touch. :)
