One of our favorite Mexican dinners...

Chicken Enchiladas
Boil 3 chicken breasts or 8 drumsticks or what ever cuts you have on hand until done. Cool and shred chicken. While the chicken is boiling you can make the sauce:
1/2 c cornstarch
1 (6 oz.) pkg. medium hot dry chili powder
1 tsp. garlic powder
1 1/2 Tbsp. salt
1/2 tsp. cumin
1/2 tsp. oregano
1 Tbsp. paprika

Mix the sauce and chicken together. Grease the bottom and sides of a 9X13 pan. Lay a tortilla in pan, spoon chicken mixture into tortilla, add cheese (we like cheddar and mozzarella); roll tortilla, closing both ends. Repeat until most of the mixture is used up. Spoon the rest on top of the enchiladas and sprinkle the top with more cheese. Bake at 350 for 20 minutes or until cheese is golden. If you make it ahead and pull it out of the fridge, bake it for 30-40 minutes.

Mexican Rice
1 Tbsp. oil
1 c long grain rice
2 1/2 c cold water
2 tsp. salt
1 tsp. garlic powder
1/4 c frozen corn
3/4 cup of tomato sauce

In a fry pan heat oil over medium heat. Add rice and cook until lightly browned. Add water and remaining ingredients, bring to a boil.
Cover and simmer until rice is tender.

Beans
I cook up a lot of beans as dh will eat leftovers for days. I don't really have a measured recipe for these. If you want, you can mash the leftovers for refried beans and freeze. They do not taste like the stuff from a can!

Pinto beans
salt
pepper
flour
I put the beans in the crock pot with enough water to cover the beans about an inch or two above the beans. Cook for 6 hours on high. Don't try to cook them in a regular pot unless you're really good at remembering to stir. One burned bean in the bottom of the pot ruins the whole batch!
After they are done, I ladle some of the juice into a fry pan and add flour to it until it's nice and thick. I then add it back into the crock pot and stir it around. Add salt and pepper to taste and cook it a bit longer until it thickens a bit. Sometimes I add bacon, if I have any.

I don't make the tomales. They are an all-day thing. I buy them from an elderly couple who make them and they come up here from the valley to sell them.

Cinnamon-Chocolate Brownies
2 eggs
1c sugar
1 tsp vanilla
1 stick butter, melted
3/4 c flour
1/2 c cocoa
1 tsp cinnamon
1/2 bag chocolate chips
nuts are optional

Beat eggs, sugar and vanilla for 1 minute. Beat in melted butter til well mixed. Add flour, cocoa and cinnamon slowly until mixture is thoroughly blended. Fold in chips and nuts (if desired). Pour into greased 8X8 pan and bake 30 minutes or until done per toothpick. Serve warm with vanilla ice cream.

Generally, I like to double this recipe(no such thing as too much chocolate!) and bake it in a 9X13 pan for 40-50 minutes. It's pure comfort food.
