We have a steer to butcher soon and I'm looking for recipes to preserve some of the beef without freezing it. Has anyone dehydrated beef before? We're looking for a way to keep the beef longer times, like a year or so. Has anyone done this? I keep finding recipes that tell how to dehydrate it but then they say to freeze or refrigerate it and use it up within a month. Our steer is way too big to get used up in that amount of time!
