Posted - Nov 06 2008 : 06:23:50 AM Hey! Half a cup later I found this to start with.
2 1/2 cups (or more) diced tart apples 1 cup cider vinegar 1/2 lemon, chopped 3/4 cup raisins 3/4 cup brown sugar 1/3 cup minced ginger 1 or 2 cloves garlic, chopped 1/2 teaspoon salt (dash of cayenne)
Combine all ingredients and simmer until fruit is soft, about 1/2 hour. Makes 2 1/2 cups.
I'll look for more. I love an adventure in my cookbooks!

Posted - Nov 06 2008 : 06:18:20 AM I have never been one for cooked fruit. Even apple pie doesn't do it for me. My poor husband grew up in the fruit belt of Michigan and unfortunately does not get his fruit pie fix at home! For father's day my 3 kids bake him 3 different pies! They don't care for cooked fruit either! I'll down another cup of coffee and head to the kitchen to find some recipes!
