Remember the recipe I shared for apple stuffed chicken breasts?

I found a recipe that is very similar only it is with cuts of pork and the apples are laid on top. I am going to make this tonight if my pork loin ever defrosts!! LOL

For the pork use pork loin and cut into 6 pieces going with the grain of the meat. Slice 3 tart apples. Sear the meat in skillet, then lay in buttered or greased casserole dish. Lay apples on top of seared meat. Mix 1/4 packed cup of brown sugar with 1/2 teaspoon cinnamon. Sprinkle over apples and meat. Dot with 1 tablespoon butter (I used two). Cover and bake at 350 for 45-50 minutes until pork is no longer pink in the center.

If you cover tightly, the meat comes out fork tender and the apples are nicely steamed.

Doug called it a "Winner" and says he would like to see it more often.

Tonight is chicken with sundried tomato sauce!

I made the chicken dish on Sun at my son's house for them and again last night using pheasant for my husband. I was thinking of trying it with pork...

It defrosted and cut into 7 great pieces of meat. The apple corer/slicer was pulled out and made that chore a lot easier! The recipe was a hit! Nice and sweet without being overwhelming.
