I made the "Corn Pudding a Nine Year Old Can Make" from the Animal, Vegetable, Miracle website. It was very good and Nora is gobbling it up right now.

I did find it a bit watery though, so I think next time I will reduce the milk a in it a bit. Also I didn't have Gouda so I subed half a cup of Parm and half a cup of mozzarella. What a nice, filling, tasty, warm dish to add to our winter repertoire.

HOLIDAY CORN PUDDING A NINE-YEAR-OLD CAN MAKE
3 cups corn kernels
2 eggs, beaten
1 cup milk
1 cup grated Gouda cheese
2 tbs. parsley (dried)
1 tbs. marjoram (dried)
Salt and pepper to taste
Combine ingredients and pour into greased baking dish. Bake at 350 for 45
minutes or until top is puffy and golden.

I make a variation of this with sauteed onions, peppers and smoked cheddar for the cheese.I also use half and half instead of milkI have also made a mexican inspired variation with pepper jack and canned green chiles;YUM!!!!

I'd suggest cheddar as a better substitution than mozzarella. Mozzarella is naturally very watery, which might be why you had problems.

I'm trying this one out tonight! The corn is already sitting out ready to go with the meatloaf! This will be a new combination for the kids! (and I love your term shelf surfing Alee!!!)

Alee, I had not heard of shelf-surfing but knew immidately what it ment. LOL One of my favorites is corn casarole using whole corn, creamed corn, and Jeffy cornbread mix. Add 1 cup sour cream, 1/2 cup melted butter, pour into 9 X 13 (or a little smaller) bake 350 for 25 Min, top with 1 cup grated chedder cheese. Bake until cheese is melted. Guaranteed to put on 5 pounds before you eat it all unless you have company.

Thanks Sherri! Next time I think I will grate the mozzarella though instead of cubing it! LOL For some reason we have a lot of canned corn on hand that I would like to use up, so this is one of the recipes I was hoping was going to be a success :D

It was a hit! Fresh garden corn would be so much better though, I picked this recipe to use up some canned corn we had had shelf-surfing for a while.
