Posted - Nov 03 2008 : 4:52:03 PM I made the "Corn Pudding a Nine Year Old Can Make" from the Animal, Vegetable, Miracle website. It was very good and Nora is gobbling it up right now.
I did find it a bit watery though, so I think next time I will reduce the milk a in it a bit. Also I didn't have Gouda so I subed half a cup of Parm and half a cup of mozzarella. What a nice, filling, tasty, warm dish to add to our winter repertoire.

Hopp and Camille Kingsolver HOLIDAY CORN PUDDING A NINE-YEAR-OLD CAN MAKE 3 cups corn kernels 2 eggs, beaten 1 cup milk 1 cup grated Gouda cheese 2 tbs. parsley (dried) 1 tbs. marjoram (dried) Salt and pepper to taste Combine ingredients and pour into greased baking dish. Bake at 350 for 45 minutes or until top is puffy and golden.

I make a variation of this with sauteed onions, peppers and smoked cheddar for the cheese.I also use half and half instead of milkI have also made a mexican inspired variation with pepper jack and canned green chiles;YUM!!!! |

Posted - Nov 12 2008 : 1:43:38 PM I'd suggest cheddar as a better substitution than mozzarella. Mozzarella is naturally very watery, which might be why you had problems. |

LOL One of my favorites is corn casarole using whole corn, creamed corn, and Jeffy cornbread mix. Add 1 cup sour cream, 1/2 cup melted butter, pour into 9 X 13 (or a little smaller) bake 350 for 25 Min, top with 1 cup grated chedder cheese. Bake until cheese is melted. Guaranteed to put on 5 pounds before you eat it all unless you have company. |

Posted - Nov 04 2008 : 06:56:35 AM Thanks Sherri! Next time I think I will grate the mozzarella though instead of cubing it! LOL For some reason we have a lot of canned corn on hand that I would like to use up, so this is one of the recipes I was hoping was going to be a success :D
