I stopped by our local Organic market "Good Earth Market" and they had some fantastic organic bananas on sale! The "over ripes" (which are perfectly ripe in my opinion!) were on sale for $.49 a pound! WOW!

So I snagged 4 big bunches and came home. My house smells so wonderful right now. I made a double batch of a luscious banana bread recipe. Yum!

Thanks for the recipie for organic banana bread. Used regular bananas, made a double batch, added walnuts (yum-o) and made five- one pound mini loves. Will take to school tomorrow and use to bribe my professors. Best banana bread I've ever made. Thanks again!

You were lucky to find those bananas! I make two at a time and the recipe I love is one from an old Moosewood cookbook. You mash the bananas and then soak them in a cup of strong coffee. Prepare the rest of the ingredients and add the coffee and bananas when it is time. I do something different still and add about 3/4 cup of semisweet or even dark organic choc. pieces to the batter for one of the loaves. And instead of walnuts, I add chopped pecans. Oh, the loaf without choc. gets the loaf pan coated in sesame seeds and the one with chocolate is coated in poppy seeds. Yum! It keeps well in the freezer.

That's too bad, Dawn! You should call their produce department and ask how many pounds they lose a week t spoilage. Put the idea to them that they would at least be making some of their money back if they discounted the over ripe ones!

Thanks for the recipe Alee. I sure wish we could get that price of organic bananas here! Whole Foods doesn't give us a price break, no matter how ripe the bananas get.

Annika- The Co-Op sells over-ripe bananas all the time. If there aren't any out, ask the produce manager when he thinks the next batch is going to get labeled as discount. One day I was in there and he was going to discount them later that day. He asked me why I wanted them and discounted a couple bunches for me right then so I could make my bread! I think his name was Doug.

Off topic, but I just this week had my first organic banana...It actually tasted like a banana! I will go in hunt of over ripe ones at our local co-op, this sounds too yummy to pass up! Thank you for sharing Alee

Diana- Of course! It is out of the Goodness Gracious cook book- The only thing I add is the vanilla-

3/4 Cup Mashed Bananas
1/2 cup (recipe calls for margarine, but I use Butter)
1 Cup sugar
2 eggs beaten slightly
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
Vanilla to taste- about 1/2 teaspoon per batch
1/2 cup broken pecans (I don't use pecans)

Preheat to 325 and grease bread pan. Cream together Bananas, butter, and sugar. I use the whisk attachment of my kitchen aid. Add the eggs and mix. Then add the rest of the ingredients and mix well. Pour into pan and bake for 45-55 minutes until golden brown or until a toothpick inserted in the center comes out clean.

Using the whisk attachment it comes out nice and fluffy and the bread is so tasty!
