Anyone have a good tomato soup recipe using canned tomatoes or tomato juice? We love tomato soup but Campbells has way too much salt and HFCS. I still buy it when it is on sale but have a hard time enjoying it when it is far from being healthy. Sure taste good though with some Cheezetts crackers floting in the bowl.

Now I am really hungry for tomato soup and a cheese sandwich, and I am a long way away from my canned tomato juice. Store bought just isn't the same.

We had grilled Cheese sandwiches and tomato soup just the other day. We all (well, all but husband) adore that combo. The recipe you posted sounds so yummy Belle!! I will have to try that! My recipe is much more like Kennie's. Nothing spells comfort food to me like tomato soup and grilled cheese sandwiches. (I use cheddar and jack cheese on GOOD bread..yum!!)

I am glad this was the first thing I saw when I finally got logged after about a year of traveling around. My dear MIL made the best tomato soup. She took a jar of the tomato juice that we canned, heated it slowly on the stove. When it was hot, but not boiling, she added a pinch of baking soda, and enough milk to make the consistancy she liked. The soda would foam up and keep the milk from curdeling. She would then add about a teaspoon of sugar, and salt and pepper to tast. We always used whole milk, because we had a cow. But canned milk makes a richer taste. It is so good. Just add a toasted cheese sandwich and you have a whole meal.

My Husband loves the tomato soup from Everyday foods. The recipe is on their website. It is simple and easy to make.

I used milk instead of heavy cream but still added the 2/3 C of half and half. It was good both ways so I think that part of it can certainly be fiddled with. Canned mik should work fine. I always change recipes, too.

Thanks Judith, sounds delicious. I think I'll replace the heavy cream with half and half. I wonder about canned milk? It would give the thickness of cream. There I go. Always wanting to change a recipe. Will give your recipe a try. Thanks again.

For my birthday last year my Daughter took me to Copia in Napa; this is the soup we had. It is the yummiest. When I make it I use milk and half and half to make it a little more healthier.
1/2 C butter, divided
1/2 C chopped onions
1 1/2 tsp dried oregano
5 C canned crushed tomatoes
4 C chicken stock
2 T flour
2- tsp salt
1/2 tsp pepper
1/4 C chopped parsley
1/1/2 tsp chopped dill
4 tsp honey
1 1/4 C heavy cream
2/3 C half and half
In a large pot over medium heat melt 6 T butter. Add the onions and oregano and cook, stirring ocasionally, for 5 minutes. Add the tomatoes and chicken stock and heat.
Meanwhile, in a small pot over medium heat, make a roux by blending the remaining 2 T of butter with the flour, whisking constantly for 3 minutes, without browning. Add the roux to the stock mixture and whisk to blend. Add the salt and pepper. Bring to a boil, stirring occasionally. Reduce to a simmer and cook for 15 minutes. Stir in the chopped parsley, dill, honey, cream, and half and half. Remove from heat and puree.
Really good with a cheese sandwich on a rainy day. Total comfort food!
