Does anyone have a recipe using the Budget Mix for pancakes? Any other recipes would be so appreciated. I have all this mix in my cupboard and have only used it once for biscuits. My daughter loves chocolate chip pancakes and I've been making them from scratch using regular flour. Would love to use the mix to make it easier! Thanks so much!

We had Budget Mix pancakes last night for supper. Chocolate chips were added. Steph said they were the best she's ever tasted.

I've used the Budget Mix to make pizza crust, too. (I think MJ calls it a "foldover." I didn't fold mine, though...just left it flat. It's real good, but keep in mind it really rises, so you get a rather thick crust. The recipe came in the Budget Mix box.

Here you go, Kay:

PANCAKES

Family Size:
1 1/2 cups Farmgirl Budget Mix
2 T Sugar
1 large egg
1 1/2 cups milk
Yield: eight pancakes

Just for Two (or you & leftovers):
3/4 cup Farmgirl Budget Mix
1 T sugar
1 medium egg
3/4 cup milk
Yield: four pancakes

1. In a medium bowl, stir together the FG Budget Mix and sugar.
2. In a separate bowl, whisk together egg and milk.
3. Add liquid ingredients to the budget mixture and stir just until blended with small lumps.
4. Ladle onto a lightly greased griddle. Flip pancakes after bubbles form and tops have lost their sheen.
5. Garnish as desired and serve with our favorite syrup or jam.

I don't have the magazine. I've looked all over the website for recipes too and found the biscuit one. It would be nice to have more recipes on the website. Could you share the pancake recipe please?

Do you have the Farm Kitchen issue of the magazine? It is amazing and has awesome recipes in it!

I have made Budget Mix:
Chocolate Chip Cookies
Chocolate Chip Peanut butter cookies
Pancakes
Bakeover covers
biscuits
muffins...

Hmmm I know there is more that I have made...I am forgetting like half the list. It's so fun just to open the magazine and start with the first recipe you find and work your way through!
