Someone was asking about apple butter earlier. yesterday I decided to make juice for apple jelly. about 16 really big apples with 7 cups of water. I ran the apples through the corer but tossed the cores in. After sitting for two hours and all the liquid was out I had the pulp left. Never one to waste I removed the cores ad the few seeds and pureed the rest. It was beautifully thick. Added a touch of honey, 2 tsp cinnamon and 1/2 tsp cloves and reheated. I ended up with 7 pints of apple butter and it was one of the best I had ever done. Next to buy more jars to finish the jelly...

I also put apple butter on pancakes and waffles. I'm no good with making jelly, so I'm not even going to try to tell you how to do that!

oh, and I use it on sandwiches, crackers and if it doesn't gel right as syrup in my oatmeal!

I used a recipe in the canning book I have. I boil down about 1 lb of apples per cup of juice. So for me it was 7 cups of water and 7 pounds of apples. Once cooked down plop the mass into cheese cloth or into a collandar. Let drain for several hours at least. The recipe calls for 5 cups juice, way too much sugar and pectin. i used a pectin that would let me use a lot less sugar, maybe 1 cup. Whatever pectin you buy will also have recipe. then I take the cores out of the mass and puree the rest. Instant apple butter with little to know extra cook time, other than to reheat enough to put in jars.

How do you make the Jelly, and what do you use it for??
Asking this because I have never done this.
I would love to make apple butter and maybe the jelly too, IF I knew how and what. Any tips for this newbie in all of this homemade yummo stuff??

You know, Laurie, making apple butter that way is even smarter than I first thought. Because when you start out coring the apples, intending them for apple butter, and continuing on with the recipe, the juice gets lost! The apple butter has to be cooked down to thicken it up. But doing it your way not only gives you a two-fer, but saves time and energy, too. I don't think I will ever make apple butter the same way again!

There should be an award or badge or something for your ingenious!

I have one batch of apples left destined for juice and apple butter. I love the butter and it makes nice Christmas gifts!

What a great idea, Laurie. I have 3 buckets of apples that I was going to be juicing this weekend (just to have apple juice on hand). Now, I'll have more apple butter, too! I would imagine it would be much easier to core the apples before juicing them.

That sounds so delicious, there is nothing better than homemade preserves. I finally got enough raspberries to make jam this year and it is so good.
And of course the jars look so great on the pantry shelves...
