Posted - Oct 08 2008 : 1:44:48 PM Ok, so from the 'What's for dinner' post, it's obvious this is chili season! ;) Anyone care to share their recipes? Chili isn't my family's favorite (the kids gag on it, even) but it can be made in advance, it's fairly cheap, and a good warm food as the weather cools down. It must be my recipe that the fam doesn't like, so share what you do so I can improve on it!!!

Posted - Oct 15 2008 : 3:38:10 PM All these ideas sound so yummy! I took a few ideas and modified them, and came up with one that's pretty tasty! I toned down the chili powder and made up for it with cumin. Added some coarsely chopped onion, celery and green chilies. For a twist, I used half of a left over roast from the night before as the meat; just chopped/ shredded it up into bites. Yumm!

Posted - Oct 15 2008 : 07:33:03 AM Cincinnati Chili is a staple at our house! In fact, my daughter is making it for her Bunco group this Friday. We always have the fixin's for 5-way plus hotdogs.
My mom used to make a soup we called "Ohio" chili (where I was born). It had ground beef, canned tomatoes, onions & kidney beans. I love all types of chili but that "Ohio" is a real comfort food for me...![](icons/icon_smile.gif)

1lb beef stew, browned some hot sausage (ground) cooked & crumbled about a cup of chopped onion half a package of bacon, fried and drained couple dashes of garlic 64oz can of tomato juice large can of MAnwich can of beer couple of bell peppers diced salt, pepper, chili powder, oregano massive amounts of dark red kidney beans corn
Put it all in a really really big pot and cook it all day... Make sure you have a couple bottles of Beano on hand.

Hey! This is a chili I know. My husband is from Cincinnati, and back there, it's called Five-Way, because it can be ordered with 1-5 additions. The seasonings are a bit of a surprise - cinnamon is one. The origin of the recipe is Greek. Another surprise. It freezes great, too. There are shops all over Cincinnati and Kentucky called SkyLine, which feature this particular chili. Why I felt the need to share such information on a food stuff is a mystery. However, it's yummy stuff, goes a long way, and I'll happily share the recipe - if I remember.

Have not made it but have been wanting to make chili ever since this topic came up. Then I remembered I had containers of chili in the freezer. Thawed one out. Ole Ron had his over a baked potato, I had mine over spaghetti. Added onion and cheese and whatcha got? Cincinati chili. Never had chili over spaghetti. Really really good. |

I just dump cans. I brown the hamburger, open a can of diced tomatoes, a can of Bushe's chili beans, a can of tomato sauce and a small can of green chilies, maybe two... I also don't brown my onion with the meat. I just cut it up and throw it in the crock pot. Also just dump the chili seasoning in. Serve it with shredded cheese and crackers, tho I would like to try corn chips...
I had to check this post, since I was going to make chili for the cowboy crew today. But they got rined/snowed out. Maybe tomorrow?? or Mon?? but chili is what I'm making!

Posted - Oct 10 2008 : 3:40:45 PM At our house, it is not chili without potatoes in it. My grandma made it this way, and my dad insisted my mom do the same. Hamburger jar of homemade tomatoe juice pint of homemade tomatoe sauce, or can of tomaote soup kidney beans, or chili beans spices and herbs of your choice and diced up potatoes All this goes in the crock pot for the day. You can throw in celery and onion too.

My favorite is this one and it's all thrown in the slow cooker: 1 to 2 lb of ground meat (we use venison but beef chicken or turkey works too) 2 celery stalks chopped 3 large onions chopped fresh mushrooms-as many as you like or 2 to 3 small cans of mushrooms 1 can beef broth 3 cans (14 /12 oz) Del Monte Stewed Tomatoes-original recipe kidney beans (we don't always use them but when we do we get the really big size one or you can skip the meat and just use beans) Spicy peppers-any kind I use long fat ones and slice into big chunks-not everyone likes to eat them and they can pick them out) chili pepper chili flakes A1 steak sauce 1 chili seasoning pkt or we got from a neighbor- Appalachian Mt Sauce: The original zest sauce
In a frying pan brown meat and cook onions till translucent add chili powder and steak sauce to taste. Throw that in the slow cooker with the can of beef broth, tomatoes, mushrooms, bean and peppers. Add seasoning pkt and fill w/ water almost to the top. Add pepper flakes and extra chili powder to your taste. Cook on high for an hr or prep the night before and turn it on low before the kids go off to school. Then it's ready for you whe you get home.

Posted - Oct 10 2008 : 09:58:26 AM I don't follow a recipe but my chili is very easy to make and it's not spicy hot since hubby can't do spicy foods.
4 cans dark kidney beans 2 cans tomato sauce 1 lb ground beef that has been cooked with minced onion then drained. 2 T chili powder
Put it all in a pot and let simmer for several hours. Enjoy with some shredded cheddar cheese and oyster crackers :)

I just brown some ground beef, add diced tomatoes, mushrooms, light and red kidney beans, a jar of chunky medium salsa, salt, pepper, and chili seasoning if I have it. Sometimes I'll add other things like chili hot sauce or jalapeno juice, depends on my mood or if I have any on hand. I'll add soy sauce if I want a richer color. I usually will sample it to see if it's what I want, adding other things as necessary. Then I serve it with shredded cheese and sour cream on top. This is one of my go-to meals if I don't have a lot of time or need to get something ready in a hurry. Mmm, reading all these recipes has put me in a mood for some good chili.

Posted - Oct 10 2008 : 06:52:02 AM I don't have a receipe really, I just make it. I use ground pork(we raise our own hogs)because I think pork really goes well with chiles I brown the pork, add diced onions and garlic, brown. Then I add a bit of ground cumin, and ground chili pepper,and black pepper. I use lots of chili pepper. After it is all browned and mixed together I add pinto beans and water and cook until the beans are done. I adjust the seasoning throughout the cooking by tasting the broth, and don't add salt until the end because I understand it takes the beans longer to cook if you salt them. When you first start cooking it you can have the heat on a higher temp, but as the beans cook and the chili thickens you have to lower your heat so it doesn't scorch. I usually make a huge batch and put it in the freezer or if I'm ambitious I'll can it. I don't add tomatoes to my chili, my chili is a more old timey receipe. For what it's worth, there's my two cents!

Posted - Oct 10 2008 : 06:36:33 AM I don't use a recipe either. I use ground beef, pork and deer. Onions, garlic, pinto or red beans, tomato juice and diced tomatoes, chili powder, cumin, Mex oregano. Maybe some more spice but I would have to get up and look in the spice cabinet. We top our bowl with grated cheese and diced onion and serve with Fritos and dill pickles.
We always have chili on Christmas eve. I used to be just the evening meal but as the kids and grandkids have married and have large extended families, it has turned into an all day event. Some will come mid morning and some won't get here until after 7:00. Makes for a long day but I only have to cook one time. What used to be one big pot has turned into several pots of chili. |

Posted - Oct 09 2008 : 09:39:17 AM I just made chili yesterday but can't say I ever follow a recipe! I use what I have which is sometimes scary! I threw kidney beans in mine, lima beans, black eyed peas, mushrooms, onion, chili powder & salt/pepper to taste, tomatoes, tomato sauce...then I ran out of all that and still needed more liquid so I added tomato soup and a can of spagetti sauce! I made a huge amount (I thought) and it was devoured in one sitting!!! I like to add just alittle bit of sugar to my bowl (mom & gram passed that to me) and I've also topped it with cheese!
