Hello Farmgirls....My canning is almost over for this year, What have you canned, dehydrated or preserved?
I LOVE to hear of differnt things than I do, How about it?

I have been very busy this summer as well. Here is what I have put up so far. Tomatoe juice, chopped tomatoes, spaghetti sauce, plum jelly, black berry jelly, green beans, in the freezer I put up over 500 ears of corn (cut off cream style), peas, apples, pinto beans, peppers and that is about it for the year. I still have to make apple butter, apple sauce, and apple jelly.

There is no other life for me, but farm life.

Mango jelly!! THat makes my mouth water just thinking about it. I did cantelope jelly one year..it was really tasty. This year has been just berry and plum jams.

I just did a bushel and half of Gala and Cortland. It was a nice sweet combination. It gave me about 22 qts of applesauce. In about two weeks I want to do another bushel of Yellow Delicious and Jonagold, which I have heard is also very yummy! My kids and I love to hear the "POP" of the jar sealing--we wait for it! i am trying to instill in them an enthusiasm for living simply and squirreling away all of our homegrown "wares" while most of the world goes to Giant for food. (and so do we!)

Also did this summer--25 lbs of green beans (a disaster)
20 qts of peaches (more shortucts that turned out badly)
20 lbs of blueberries (frozen)
10-15 qts of salsa
5 qts Italian tomatoes
5 different kinds of jellies--including mango!
10 dozen ears of corn (frozen)

I am just learning, but I LOVE it and hope to do tons more next year!

Laurie, would you PLEASE put your recipe for crackers on here???? I've asked before but no response. PLEASE, PLEASE!!!! I need homemade crackers really bad. And can whole wheat flour be used?

Just did 7 qts of V-8, 2 pints of pickled eggs (wanted to try it first), and 5 pints of salsa. I didn't get the salsa packed very well, so they are more like 3/4 pints. Lesson learned. i didn't get started til late afternoon as I was running errands. the nice part is that I found pork chops on sale. Buy 1 family pack get one free! I'm not a huge meat eater, but mom loves them and I do on occasion too. Today I have to finish up the box of tomotoes I bought. Pizza sauce in 1/2 pint jars. Smaller than store bought so I can get through an open jar, ha. And start the crackers for company this weekend. Nothing like using your friends as testers. It will be my first batch of crackers to make at home.

I just canned 6 qts of squash. And canned 7 qts. of green beans the other day. The beans I planted the end of Aug. are coming on strong. I may not have to can at all next year!!

Jenny, wish you were closer. I have apples going to waste. We finally finished picking the first and biggest tree. Still have to do something with 3 5 gal buckets full. Then it is on to the next tree. Will not get in a hurry until they start falling off or if a frost is predicted. One more cutting of okra to put in the freezer. It doesn't have the quality as it did earlier. Got too much to can and freeze to work with anything but the best. That is how I do my apples, just the big ones. Still have tomatoes comming on. Made another batch of tomato junk for the freezer (tomatoes, garlic, onion, bell pepper, celery) What is left of the tomatoes we will eat (fast) and share with the neighbors. Still have lots of bell peppers. Going to let as many as I can stay on the bush to turn red/yellow. Will pick them just before frost. Harvested all the cayennes. Got them in the dehydrator. Will put them in the blender to make hotpepper flakes. My fall crop of greenbeans are still a few days away. They better hurry. I have mixed emotions about frost. I am usually ready. But with the economy (or lack of) I feel like I need to put up as much as I have the energy to do.

Picked the last of the peppers just now. I really thought they had ended a few days ago but daughter came in and told me that there were at least 12 nice ones on the aneheim pepper plants..yay!! So I can use them in the salsa I will be canning this week. The tomatoes I have ripening inside now cuz of the cold nights are getting ready fast. I have enough ripe ones for a batch (about an 8Qt. pot) now..and peppers and onions ready to go. I will likely do that tomorrow night. More plums in a basket on the table too..needing to be MORE plum jelly.
Still havn't got any apples (I have to buy some) but will be making a trip up north on the 10th for the day so I am hoping to find some then...must can applesauce!!!

I just got the grapes last night and they're sitting in my kitchen. The whole kitchen smells like grape candy and I haven't even started doing anything with them yet!

I have to re-build a set of shelves in my pantry before I can pack any more in there. The one set of shelves is one of those big metal utility shelves and I broke it with all the jars I set on it. Two shelves caved in! Need to scrounge up some wood, I guess. I still have lots of jars sitting on the counter and on top of the washer and dryer and I have more to do, still.

I powered through 4 dozen jars of strawberry jam yesterday.

Boy doesn't the kitchen smell great!

Will have to start now on days off making jellies 'till the first week in December.

Someone wanted 300 jars of jelly to give out at their spouses workplace. Don't think I have the resources or the willpower to do THIS many! So this order will be broken down into 150 jar increments. Once group will get jelly this year, the following group next. Nevermind the regualr orders too! It's nice to have something a lot of people go crazy over.

It's all so simple too

This thread makes me want to can more yummy things :) Ice cream topping, apple jelly.. yummy!

It's funny I look into the freezer and cupboard and think "I don't have nearly as much done as I should!" Lol.. I think one of the problems is that the fella is eating the jam as fast as I can make it. The strawberry jam I canned in the early summer is almost all gone already. We are a very heavy peanut butter and jelly eating household :p

I think I'm almost done for the year though. I think I'll do one more batch of grape jelly. (Heck, the grapes are free for the picking..) and maybe a few freezer apple pie fillings. Then as fall progresses I can do pumpkin goodies, butternut squash goodies and more apple stuff. The folks at the farmer's market sell apples all winter, so supply should be easy.

I can't wait to make a whole inventory of everything made, and then find the gaps for next year. There is nothing prettier than a pantry or cellar with full jars all lined up in a row :)

wow meg! this is my first year canning. earlier in the summer i made strawberry jam and sweet pickles. this weekend i make apple jelly.

I'm very lucky. My husband likes to help me can. We usually only can things we grow but the last few years we have been moving around and are just renting a place here in Billings Montana. We do however still can things like Butternut Soup with Roasted Garlic and Tomato Soup. I think by canning your own soups, fruit or vegetables not only help the food budget but your health.

I have frozen: Corn, apple pies, strawberries, strawberry jam, snap peas & applesauce
Canned: peaches, pears, salsa
Made: rasperry jam, peach jam, peach topping for icecream,& pancakes, pepper jelly, blackbery jam
Pretty much the garden this year is done.. more next year for sure...
I am just re-entering the farmgirl life. Since we moved here to Oregon from Arizona. I lived in Wash. State for 40 years and canned & froze food for my family when they were growing up. All grown & empty nest, I now am retired remarried& Hubby & and starting life a new! I love it here.. Very blessed with family love and our little acre...

I am still doing tomatoes and plums here..and hope to get apples and do some applesauce and apple butter real soon. (my own apple trees had no apples this year..late freezes stopped that) I will be canning more salsa tomorrow and probably more plum jam too. Likely some more meatballs in sauce will happen too. I love having them canned up for quick meals. I try to can something each day this time of year..but the past few days I have been working (subbing in second grade) so I haven't got as much done...I am glad to be off tomorrow !!

It feels like I haven't stopped canning/preserving since the beginning of August :P

Today I got 8 jars of concord grape jelly done. It is delish.. the Fella tasted it, and said - "you are going to make some more of this aren't you?" I guess 8 jars isn't enough!

I've also done some freezer pear pie filling today, adapted from a peach pie recipe - I'll cross my fingers and hope it works!

This is my first year really canning/preserving lots. I can't wait 'til we're surrounded by snow and I can whip up a peach pie like magic :)

Tomatoes, muscadine & grape jelly, and green beans; also freezing some squash and corn. Wish I had time to do more canning. Isn't it wonderful to know that you grew some of your own food?!

I am freezing peppers, canning tomatoes, I will be yanking out onions this wekend and freezing them. I think I may freeze some corn as well.

Oh my where do I start? This is my job, keeping the garden and putting everything up for use throughout the year. So far I have canned- Jam (raspberry,strawberry,blackberry,jalapeno,3 berry,cherry, and ground cherry) Peach butter, Apple butter, Pears, Peaches, Blackberries, Cherries, Jalapenos, Pickles, Pickled garden mix, Tomatos, Tomato Sauce, Dilly Beans, Tomatilla Salsa, Applesauce, and Fruit Cocktail.

Into the freezer- Beans, Carrots, Corn, Peas, Baby Brussel Sprouts, Tomato Soup, and Bell Peppers.

Dried- Jalapenos, Onions, Celery, Potatos, Cherry Tomatos, Cayennes, Carrots, Green Beans, and Pinapple.

Still working on Tomatos, Apples and Pumpkins

You know I was feeling like I didn't get much done this summer, but I guess I did. Hopefully this will get us through most of the year without having to buy much produce. I will have to either buy or go pick Broccoli, haven't decided which one it will be yet. Depends on how much energy I have left.

Angie-Great choice, applesauce is a good place to start canning. You will do just fine!

Still doing tomatoes and apples. I cut okra about every other day, it goes in the freezer. My onion crop is starting to go bad so I'll be chopping and freezing onions too. Still 3 or 4 weeks from frost. Will do the few tomatoes that are still comming, Lots of bell peppers left out there. Herbs and one apple tree that I have not started picking. Don't think I am any ways near done.

We are in a new house, so no garden this year, but I am blessed to live in the middle of u-pick heaven, until I can get my own garden in foe next year.
I canned tomatoes and apple butter early in the month.
My $3 flea market food dehydrator works like a charm so I dehydrated Fuji apples yesterday, and will do cranberries today.
I picked over a gallon of blueberries a few weeks ago and froze them but will be drying about a quart of them tomorrow, I love to make my own granola & play w/the dried fruits.
I picked another 1/2 bushel of Cortland & Jonagold apples yesterday and will be canning apple pie filling this weekend, just need to get the Clearjel. I have learned my lesson from last year and will leave enough headspace.
Sugar pumpkins are in, so I will freeze pumpkin puree this week or next. Bummed to find out it is not safe to can pumpkin butter!! Also will see if there are any pears left to pick for pear butter.

BTW, would anyone have a recipefor Cracker Barrel's fried apples (or similar) to can?

So far, I have canned elderberry juice, plum jelly (it finally set up!), plum syrup, plum juice, apple butter, applesauce, apple slices, peach butter, sliced peaches. Yesterday, I stopped by an empty lot in town to check on the plums there and they are ready as are the apples I make into apple juice. So, I'll be juicing apples this weekend and making plum butter. Oh, and a neighbor called and said she had a friend trying to get rid of a bunch of concord grapes and did I want them? You bet! So, I'll also be making grape jam and grape juice soon.

I'm still waiting for my tomatoes in the garden. I might just have to buy some paste tomatoes to supplement what I do get out of the garden. But I've had a heater out there under a tarp to keep them warm at night so, hopefully they'll ripen up soon.

This is the most canning I've ever done. I can stuff every year but, this year, I picked twice as much as I've picked in the past. It's been a lot of fun rearranging the pantry to try to pack all these jars in there!
